Nutritional Benefits of Mussels:
Mussels are a fantastic source of protein for muscle development, providing a lasting feeling of fullness. They are rich in vitamins A and B12, benefiting your skin, eyes, and immune system. Additionally, mussels are packed with zinc, promoting a robust immune system. Today, I want to share with you a delicious mussel recipe!

Ingredients:

1. 2 pounds of mussels, scrubbed and debearded
2. 3 garlic cloves (2 chopped, 1 left whole for bread)
3. 1 big shallot or 2 small shallots, finely chopped
4. 2 tablespoons extra virgin olive oil, plus more for bread seasoning
5. 1/3 cup tomato sauce
6. 1/4 cup dry white wine (or 2 tablespoons white vinegar as a substitution)
7. A handful of flat-leaf parsley, coarsely chopped
8.1/2 teaspoon dried oregano
9. 1/2 teaspoon dried basil
10.1/4 teaspoon chili flakes (optional)
11. Kosher salt
12. Ciabatta bread
13. Freshly ground black pepper

Instructions:

1. before cooking, wash the mussels in several changes of cold water.
Using a dry towel, remove the beards by pulling them out.
2. To eliminate any remaining sand, soak mussels for about 3 minutes in cold water containing a handful of flour.
3. Rinse the mussels under cold running water while scrubbing them with a firm brush. Discard any with broken shells and leave them in the strainer, ready to use.

Cooking Instructions:

1. Heat oil in a stockpot.
Sauté the chopped shallot, garlic, oregano, and basil to create a flavorful base.
2. Add tomato sauce, freshly ground black pepper, a pinch of salt (mussels have enough salt), and stir with white wine.
3. Add the mussels and give them a good toss.
Cover the pot and steam over medium-high for 10 minutes until the mussels open (do not remove the lid). Toss the mussels, recover the pot, and steam for a couple of minutes to soften.
4.Transfer the mussels to 2 wide pasta bowls. Add chopped parsley to the liquid, mix, spoon the liquid over the mussels, and garnish with parsley and bread. Serve immediately.
Bread Preparation:
While cooking the mussels, cut the ciabatta bread into slices, rub half garlic on them, add ground black pepper, and pour extra virgin olive oil. Leave them in the toaster for 10 minutes.
