As always it is so great to have you here and I  hope you’re staying safe and healthy out there   anyways right now we’re in what I consider to  be the hump stage which is between Christmas  

And New Year’s and as you know during this time  of the year we eat so many different foods and   sweets that we kind of need a dish to balance  things out to bring us back in our feet anyways   today that’s exactly what we’re cooking we’re  talking Spanish beans with tomatoes and rice  

Now the beauty of this recipe is that it’s  made with heart healthy ingredients and that   it comes together in under 30 minutes yet it  feels like comfort food that’s been simmering   for hours folks we’re talking a ton of great  flavors very easy to make and truly the kind  

Of food that’s going to make you feel like a  million bucks alright let’s just jump right   into this recipe I’m going to add in two  cups of water into a saucepan which is 480 ml then we’ll pinch in 1/4 teaspoon of  saffron threads which is .17 grams link where  

You can get the golden saffron I’m using in  the description box below and we’ll season   generously with sea salt then we’ll heat  it with a high heat and give it a gentle mix while the water’s heating let’s  get the rest of our ingredients ready  

I’m going to finely chop one small  onion roughly chop five cloves of   garlic finely chop one green bell pepper  and roughly chop one carrot that’s been peeled then we’ll drain two cans of butter  beans into a colander and rinse the beans  

Under some water the size of the cans  that I’m using are 15 1/2 oz which is 440 grams each and adding one cup of long grain  rice into a fine sieve which is 190 grams and rinsing  the rice under some water until it starts  running clear underneath which takes about  

1 to 2 minutes to make this dish you can use  whatever rice you like however just make sure   to check that package instructions that way  your liquid to rice ratios are right on the money okay let’s move back to the saucepan once  

The water comes to a boil  We’ll add in the 1 cup of rice and we gently mix it in there then we’ll place a lid on the pan and  lower the fire to a low medium heat and we’re  

Going to simmer this for about 15 minutes  or until all that water has been absorbed   by the rice in the meantime let’s start  cooking our Spanish beans I’m going to he   a large fry pan with a medium heat and add in  2 tbsp of extra virgin olive oil which is 30 ml

After a couple minutes we’ll add in the chopped vegetables and as always we’ll mix them  around continuously that way everything evenly sautes after 3 to 4 minutes and the vegetables  are lightly sauteed I’m going to add in 1  

Tsp of sweet smoked Spanish paprika which  is 2 and 1/2 grams half a teaspoon of hot smoked   Spanish paprika which is 1.25 grams and half a  teaspoon of ground cumin which is 1 and 1/2 grams and we’ll give it a quick mix that way  the spices are evenly coating all the  

Vegetables as always the Spanish paprikas I’m  using are from Kiva link where you can get some   in the description box below and if you buy  it from that link you also get 25% off your order then we’ll add in a 15 oz  can of tomato sauce which is 425 grams

The butter beans that we  drained earlier and season everything with sea salt and fresh cracked black pepper and we’ll give it a gentle  mix until everything is well mixed together once everything is well mixed we’ll lower  the fire to a low medium heat and we’re going  

To let this simmer that way all the flavors can  develop alright let’s move back to the rice it’s   been simmering for about 15 minutes and as you  can see all the water has been absorbed meaning  

That rice should be perfectly cooked through at  this point I’m going to remove the pan from the heat and using a fork we’ll gently fluff  the rice this is to help separate the grains and then we’ll transfer  some of the rice into a serving dish

Then we’ll move back to the simmering  beans and remove them from the heat and transfer some of the beans  into the dish right next to the rice and for the final touch we’ll  garnish with fresh parsley check it
