You were saying that mental load it really is probably my favorite thing about freezer meals like the other night we were having I think it was cashew chicken which we’re going to show you later just hang in there a bit and my husband said what is your favorite thing

About this meal and I’m like that it was a freezer meal and that I could take it out I could have said it’s delicious I could have said you know a million things about it because it is delicious and it is healthy my favorite thing about it was I didn’t have to really

Think about it I could just take it from my freezer me too even all these years later after doing freezer meals for like almost two decades it’s not lost on me like I still am thankful I’m grateful like my shirt said you are grateful for freezer meals like

They have been lifechanging and I’m not exaggerating when I say that we hear it all the time from people in our comment section and in our Facebook group and we’d love to hear from them and I think you could experience this Too so we’re going to get to our recipes if you are new to freezer cooking then you know we’re diving right in here today but I invite you to look back on our Channel and watch the videos that we have that are specific to how to prep

For freezer meals or freezer cooking for beginners because that will really give you a better idea of how we’re able to just throw things in the bags and have all the prep done and have it be so simple to assemble these meals and really in an after afternoon you could

Have all of these in your freezer and you could double them so that you could have double all of these in your freezer in that same afternoon doesn’t take a whole lot more time to double each recipe then you can experience the freedom that’s right the first one we’re

Going to do is our Thai chili chicken lettuce wraps you can have restaurant food at home for a fraction of the cost in my opinion these actually taste better than they do at at the restaurants I agree tell us what’s in them Charlotte so into your large

Freezer bag you’re going to add some ground chicken that’s been cooked some minced garlic we like to use the minced garlic from a jar because it saves a lot of time some diced onion roasted cashews some carrots that have been cut into matchsticks or you can actually buy them

That way preut some diced red pepper a bit of fish sauce and some soy sauce you’re going to squish that all up in the bag to combine it that way you don’t have to do dishes by mixing this in a bowl and then you’re going to get as

Much air as you possibly can out of the bag because when you’re freezer cooking air is your enemy it causes your freezer burn and it is not your friend then in a quart size that’s a medium freezer bag you’re going to add some Thai sweet chili sauce some lime juice and sesame

Seeds you’re going to again get the air out of that seal it and you’re going to staple these two bags together above the seal and that way on the day you go to cook this you will have almost everything that you need because we’re not going to freeze the lettuce so

You’ll still need that later anyway get that in your freezer on the day you got to make this you’re going to thaw it and all you’re going to do is heat together the contents of your large bag in a skillet this does not take long at all

To cook through in 10 minutes it’s all done and then you can serve it in lettuce leaves those can be either be Roma or butter lettuce on your lettuce Lea you’re going to spoon some of that chicken cashew mixture and then you’re going to put some steam fried noodles

Just crumble those on top that’ll give you that nice Crunch and if you want you can sprinkle this with some cilantro and of course you’re going to take the sauce that you had in that quart size bag and Spoon that sauce on top so you have all

These amazing flavors all together it is so yummy the first time we had this it really was like it was restaurant quality there are times we’ve had this as an appetizer and then there are times that it is totally our meal and it’s so good and healthy pretty inexpensive too

Because other than the cashews other than the cashews cuz where we live ground chicken is one of the least expensive meats that you can get other places sometimes it is a little more expensive there’s been stuff happening with chickens in the last year but it is pretty inexpensive to make yeah this

Next recipe is the chunky bolog sauce now when you think of bolog you might not necessarily think you know gr beef equals healthy but I’m going to tell you with the amount of vegetables that are poured into this one it absolutely is in our bag we’re going to add some brown

Ground BR beef that we had browned up the day before we’re going to add a diced onion some chopped celery you can add half a cup of Cho zucchini we’re going to add minced garlic crumbled cooked bacon diced tomatoes some tomato paste some water Italian seasonings and

Salt and pepper we’re again going to mix this around right in the bag so that we don’t have to dirty up a bowl and we’re going to get all that air out seal it up and freeze it on the day that we go to cook this we’re going to get it thawed

And into our pot on the stove get it cooking getting all those flavors melted and all our vegetables softened and then you can serve it on spaghetti or you could do spaghetti squash or zucchini noodles and make it like doubly healthy yes and you can also cook it in the slow

Cooker if it’s one of those days where you’re going to be doing a lot of running around or you’re at work and you’re just coming home and wanting to like eat right away so that’s a nice option too absolutely maybe our single best find of last year was inventing

These spinach artichoke quidas I think it really was um we you tried these out Charlotte invented the recipe she’s like we had all these things we were already making for one of our Mega sessions and she’s like that would be really nice in a quesadilla and we like fell off our

Chairs it was so good this is actually so tasty that you can have this quesadilla without needing to have salsa sour cream guacamole or anything to dip this in because that’s how much the flavors hold their own this is one that you are going to need a mixing bowl I’m

So sorry that I caused you dishes but the flavors are going to make it worth it so in your bowl you’re going to mix together some Artio carts that are drained and chopped some fresh chopped spinach red pepper that’s diced minced garlic some mozzarella or Monterey Jack cheese that’s shredded

Some parmesan cheese salt pepper a little bit of red pepper flakes and you’re going to give that a good stir so that all of it is combined and then you’re going to put a couple spoonfuls about 1/4 cup or 1/3 cup and if you want to make this go faster you

Can actually use your qu or thir cup measuring spoon for this you’re going to put that on half of a flour tortilla you’re going to fold it over and you’re going to place this on a baking sheet you’re going to do that for all of them

Making sure that you only do a single layer on the baking sheet and freeze them like that it’s really important that you get them fully Frozen before you transfer them into your freezer bag we discovered the hard way that if they’re not fully Frozen and you transfer them into your freezer bag they

Will stick together they will be very hard to separate and it makes it less fun it does make it less fun it doesn’t make it taste less fun but it does make it less fun when you’re trying to peel apart like weeping tortillas and it is

What it is so this is the best advice we’re giving you in this video right here make sure that they are frozen before you get them in the bag and we know this like we are freezer meal experts we knew when we put them in we just I think we were just excited

No it was because we were doing a mega session and we needed the freezer space because for those of you who are new to our Channel Christy and I are neighbors and besties and once every 3 months for 12 years now we have been getting together and making enough meals for

Both of our families for the next 3 months which is why we said earlier we have the freedom from never having to think about what’s for dinner and when we do those big Mega sessions we do start to run out of freezer space so in general we don’t do a lot of recipes

That require us to put them on the tray and freeze them flat and then transfer them but we just really really wanted these and so we did do them in the in the mega session and then as we were running out of freezer space we’re like ah they’re frozen enough but they they

Were not they were not spoiler alert the narrow raater comes over and says but they were not but that’s okay you live and you learn like we say all the time done is better than perfect and that’s okay we just we live we learn and we’ll

Just do it better next time and now you can learn from our mistake which is freeze it freeze it first and of course on the day you go to cook this you just either can cook it in the oven this is done so quickly or you can do it in a

Healthy let let me tell you about this sweet potato soup that we have you better buckle up because there is a lot of stuff going into this bag and it is it is so colorful for starters yes and it is just delicious I think I’m going

To find a thesaurus this year and figure out all the different ways to say delicious or tasty or so good or whatever because they all belong to this recipe it is that wonderful into our large freezer bag we are going to add four cups of sweet potatoes that have

Been peeled and sliced we’re going to add a couple of diced onions minced garlic some chopped celery some chopped red pepper some olive oil paprika turmeric cinnamon cayenne and a b Leaf we’re going to then add our chickpeas that have been drained and some soy sauce and some diced tomatoes now it’s

Already getting pretty Saucy so at the end then you can add your chicken broth or you could use vegetable broth if you want to make this truly vegetarian and you can close up your bag if you were running out of freezer space which sometimes Charlotte and I do you want to

Maybe put a note on your bag on your label to say add three cups of your broth later so that it’s a little bit thinner of a bag when you get it into your freezer seal that sucker up and freeze it on the day of cooking you just

Thaw it and get it into your stove top you really just need to bring it to a boil and let it simmer for 20 minutes and of course add your broth if you made the the note to add the broth on the day of cooking which we often do like I said

Before all these spices all these vegetables it is like just a party in your mouth can that be in theasaurus and like you wouldn’t expect a sweet potato soup to be exciting exting is it is it is uh you’re going to love it I promise this next recipe is also one that is

Nice and colorful which again like christe said The more colors I see the more I think like oh I’m feeding my family healthy cuz it’s like all those vitamins you’re not wrong you’re not wrong I just think it’s really cute sometimes not this one so much but

Some of our other recipes including one that’s coming up right away here they make such a pretty bag yes like they’re beautiful and I I know it sounds like I need to get out more but I get very excited by food and when you have a bag that looks that

Pretty yes then you know it’s gonna taste really amazing there are some recipes that we have that Charlotte will make and then purposefully not mix in the bag so that they’re layered and you can see like the yellow and the orange and the the green and all of the the

Purple Pur like a rainbow it is a rainbow and the more colors in your Rainbow the better it’s going to be for you so she does get excited about that and that is one of the things I love about her okay the mixed bean casserole

Which is not as pretty as some but you know it’s got some color it’s almost art not really in your bag you’re going to add a can of pinto beans I like to use the chili style pinto beans some black beans taco seasoning we get our taco

Seasoning in bulk or make our own so you can either use a packet or 4 tablespoons equals a packet then then you can add some chunky salsa frozen corn and Cubed peeled sweet potato you’re going to get that mixed all together in the bag get

Out as much air as you can seal it and freeze it on the day you go to cook this you can cook it up in your slow cooker and it could not be easier as I mentioned earlier we have this cashew chicken sheet pan dinner now part of

What we love about sheet pan dinners is that it’s less dishes everything is on the sheet pan the chicken is there the the cashews are there this has a ton of vegetables in it it’s really seasoned well and that is a wonderful thing to have it all on the pan it tastes great

And it’s easy clean up because we usually like stick some foil on there or some parchment paper as well you may have noticed that we don’t love doing a lot of dishes so if we can get away with a sheet pan mixing in the bag or a one

Pot meal we’re going to do it we’re going to take that opportunity and uh we advise that for you too unless you love doing dishes I don’t know who you are but you’re out there I’m sure so the other thing I love about this cashew chicken sheet pan is really that it is

So good and then it’s very simple to just make a little bit of rice with it or some noodles you could even do potatoes with this it is great so let me get to the recipe for this recipe we are going to have a couple of different bags

The first bag we are going to add our chicken and it is going to be raw and Cubed and we’re also going to add in some snow SN peas and our cashews in the next bag we are going to add some red pepper yellow pepper and orange pepper

That all has been coarsely chopped and then big chunks of Purple Onion then in a bowl sorry there’s a bowl but we make up for it in the sheet pan in the bowl you’re going to add your soy sauce together with rice wine vinegar sesame oil some minced garlic which we use from

A jar because honestly we go through it so darn much that it’s just cheaper and better that way and we use grated Ginger right from a squeezy tube kind of for the same reason we aren’t spending a lot of time and effort grating our Ginger when we can just buy the little squeezy

Tube at the deli we mix all that together and then we’re going to divide that sauce evenly between the two bags and then we’re going to staple those together after we get all the air out and we seal them up and we freeze them on the day of cooking we’re going to

Actually thaw them and then first we’re going to put the veggies on the tray with the sauce and get that into your oven at 425 for like 15 minutes then we’re going to take it out add the chicken with the cashews and the peas and put it back in for another 15

Minutes and just make sure it is nice and cooked and crispy we can take it out and garnish it with some chopped green onions and sprinkle it with sesame seeds this is wonderful I like to serve mine on the long rice noodles but you could also do rice or like you were saying

Before potatoes or um since the first time we had this one we knew it was a keeper yes when we know something’s a keeper then we put it into the freezer meals 101 Club you might see recipes on our Channel where we’re trying it for the first time and we’re not sure but

Freeze before you can by adapting them a little bit and so we were able to add that in there that’s right this next recipe is colorful not quite as colorful as the cashew chicken sheet pan that you just talked about that one is really pretty with like the red peppers the

Orange Peppers the yellow pepper the Purple Onion I mean the chicken’s kind of chicken colored but but there’s also the green the the um snow peas yes it’s beautiful and then there’s some brown cashews right you know there’s room for that too but that’s some extra protein

Sure so this next one with its colors is our Moroccan chickpea stew and it’s a favorite at both of our households it is just wow that’s what I have to say it’s like M right yeah mhm to your large freezer bag you’re going to add chopped onion minced garlic some

Sweet potatoes or yams that are peeled in cubed drained chickpeas diced tomatoes some pitted camata olives vegetable broth a little touch of brown sugar cumin curry powder paprika turmeric Cayenne now you can adjust the amount of cayenne it just calls for a/4 teaspoon but if you like things a little

Spicier you can feel free to add more some salt and pepper you’re going to again just squish this in the bag to combine it get out your air seal it and freeze it now on the day you to cook this you are going to cook it up on your

Stove top or in your slow cooker you can add some extra protein to this if that’s what you’re looking to do because this originally started as a brunch dish and you’re supposed to serve it with poached eggs in it so if you’d like you can serve this with poached eggs in it and

Some crusty bread on the side and you have a really full meal and your extra protein we don’t have this recipe in this particular video but it does remind me of the shakshuka because it is a breakfast item that is stew like that you cook your eggs right in it and if

Bit foolproof if you aren’t going to be home in time to get supper going you might have teenagers or a spouse that can read directions and that could just pop this into the oven dinner could be pretty much ready when you walk in the door and isn’t that a nice thought

Because everybody could help I think my 13-year-old son could honestly oh he’s going to be 14 by the time this goes up maybe so into our bag we’re going to add 8 to 10 chicken thighs that are boneless and skinless we’re going to add in a purple onion that has been chopped into

Large chunks half a cup of sundried tomato and oregano salad dressing some minced garlic some Greek seasoning dried Mint or fresh if you have it lemon juice Capers calam olives that have been pitted and that is it we are going to mix that around in our bag seal it up

After we get all of that air out and get it into our freezer now it’s going to say on our cooking instructions that you can add your meal and add some fresh baby grape tomatoes and you’re going to cook this for 25 minutes at about 400

Then for the last 2 to 3 minutes you can sprinkle some feta on top and broil it and just let it crisp up man is this delicious this meal also goes really nicely in the air fryer oh yeah it would yes it does and this is one that might

Not look so beautiful in the the bag but once you add those pops of red for the tomatoes and you’ve got the white with the feta and everything kind of caramelizes a little bit with the broiling it is beautiful and you can serve it with like couscous or rice or a

Greek salad cuz I mean it’s Mediterranean chicken sheet pan so lemon rice lemon potatoes it’s the sky the lities are endless the sky the limit plus a fraction of the dishes for like pretty much a gourmet meal a lot of the meals that we’ve shared with you today

Are restaurant quality they are healthy and we hope that this shows you that you can eat those restaurant quality meals at home for a fraction of the price and it doesn’t have to take over your life you don’t have to be going to the grocery store every second day picking

Up ingredients and then getting home and realizing oh I forgot something and going back you don’t have to be trying to write down meal plans and then having those good intentions which is you know your vegetables go moldy in your crisper when life happens and you get too busy
