I hope you guys enjoy these quick recipe videos! This Butternut Squash soup recipe is a go to for me every fall and winter. I made a small batch in this video, but I’m giving you the full recipe below.

2 pounds butternut squash
1 large yellow onion
4 garlic cloves
1 cup coconut milk
4 cups broth of choice
salt & pepper
cayenne to your preference

Throw it all in the crockpot and cook on high for 4 hours, then blend with an immersion blender.

Alternatively, toss the squash, onion, and garlic in the oven and bake at 400 for 15 minutes. Blend with seasonings, broth, and coconut milk

*This recipe is also incredible with a tablespoon of thai red curry paste mixed in!
