1 Bunch of Thin Asparagus
1/2 Tsp Garlic
1/2 Tsp Oregano
2 Tbs Light Mayo
4 Tbs Red Wine Vineger
1/2 Cups Red Onion (sliced)
Half Yellow Bell Pepper (Sliced)
1 Medium Chopped Tomato
1 Cup Black Beans
Dressing
In a small Bowl add garlic, oregano, light mayo and red wine vineger. mix well
Boil asparagus about 5 Minutes (make sure to cut off bottom ends)
Blanch in cold water untill cool.
In a Large Bowl, add asparagus, Onion, pepper, tomato, beans, and dressing, Mix well
Top with Cheddar or Feta cheese.
