Cauliflower Gratin 2 pounds (900g) cauliflower – about 1 large head cut into small florets Place in a steamer basket over simmering water steam the cauliflower for 4-5 minutes set aside 1 ½ cup (360 ml) milk 1 bay leaf 2 cloves garlic Bring to a simmer
Set aside for 5 minutes to cool slightly 2 tbsp (30g) butter Melt over medium heat 2 tbsp (20g) flour Cook for 1 minute Remove the bay leaf and garlic Whisk in the milk stirring constantly until thickens ½ tsp (3g) salt ¼ tsp (1g) black pepper
1/4 tsp (1g) nutmeg set aside ¼ cup (25g) Parmesan cheese 9 -10 inch (23-25cm) baking dish, greased with butter Coat with 2-3 teaspoons of breadcrumbs Place the cauliflower florets 1 green onion, finely chopped Pour the cheese sauce 1/2 cup (50g) Parmesan cheese, grated 1/3 cup (50g) breadcrumbs
¼ tsp (1g) black pepper 1/4 tsp (1g) garlic powder ¼ tsp (1g) salt 1 tbsp (15g) butter mix to combine Sprinkle over the cheese Bake at 400F (200C) for 25-30 minutes until golden brown
