Healthy protein blueberry baked oatmeal that is WFPB is the recipe I am sharing with your today. This recipe is easy and so delicious. The full recipe is below.
PROTEIN VANILLA BLUEBERRY OATMEAL BAKE
2 1/2 cups oats
1/2 protein powder
2 cups unsweetened soy milk
1 flax egg
2 T PB2 mix with water
3 T maple syrup
1 tsp. vanilla
1/4 tsp salt
1 tsp. Ceylon cinnamon
3/4 cup blueberries
1 ripe banana
Preheat oven to 375 degrees
Make the flax egg by mixing 1 Tablespoon of ground flax seed and 3 Tablespoons water mix well and set aside
Add banana to a large bowl and mash well
Next add in maple syrup, flax egg, PB2 and vanilla and mix well.
Next add in cinnamon, salt and protein powder and mix well
Next add in oats, 3 Tablespoons blueberries and soy milk and mix well
Line a 8 x 8 inch baking dish and add a few blueberries to the bottom of dish. Pour in the batter and add a few more blueberries on the top.
Bake for 35 to 40 minutes until the center is set. Let cool and cut into nine squares.

Clarification I think some people are confused and think that I’m advocating for a super high protein diet I am not I am just saying that as I got older I need a little bit more protein in my diet I’ve been on the starch solution for around 6 years and it was was great

Not advocating for super high protein and I’m eating all kinds of different things like tofu Tempe edamami beans legumes I’m including all that in my diet I’m just making sure I get some of that at every meal so enough of that and let’s get on with the recipe so I want
To show you the ingredients we’ve got a banana we’ve got our gluten-free oats you can use regular oats if you want I’ve got protein powder blueberries flax which we’re going to add water to this and make a flax egg and then I’ve got some pb2 keep our
Calories a little bit lower soy milk great protein here I’ve got some vanilla salt and cinnamon and maple syrup so we’ll start by making our flax egg and this is going to replace an egg that she would use use in a normal recipe like this so I’ve got 1 tbsp of ground flax
Seed and 3 tbspoon of water that will equal one egg so you just give it a good mix then we’re just going to set it aside while we get the other ingredients together this is going to get nice and thick and egg likee so I’m going to
Start by mashing the banana now the banana will help with any replacement for oil in a recipe and it’s going to add some sweetness so this is a good substitute for oil cuz a lot of recipes will call for coconut oil or just regular oil and we
Don’t want any of that so I’m just going to mash this until it gets pretty well liquefied and you want a nice ripe banana that’s kind of spotty and then just on a side note I’ve said this before but take this peel and rub it all over your face it is so good
For your skin and that way you’re not just throwing it in the compost but get a little use out of it just rub it all over your face you’ll be surprised at how soft your Skin’s going to get all right so we’ll mix this up so you want a consistency like this just
Smash all the big chunks out and it gets you know kind of liquefied here a little bit then we’re just going to start adding our other ingredients so I like to add the liquid ingredients next so I’ve got my vanilla my maple syrup and then I usually go to
My P TV2 and full recipe will be in the description box and you can see our flax egg how it’s got nice and thick so we’ll add that and then I just like to give this a good stir and I wait till the end to put
The soy milk in so I’m just going to whisk this all together get it all Incorporated now let’s add our here our cinnamon and our salt just a little bit of salt I’ve got uh my protein powder going to whis this up a little bit I mean you could just do it all
Together but I don’t know I like to incorporate things a little bit at a time all right now I’m going to add in my oats and my soy milk and I’m going to switch to a spoon now we’ll just get this all mixed up and then I like to throw in a few
Blueberries into the actual batter I’m going to save a few for the top I’ve got an 8 by8 pan here that I’ve lined with some parchment paper I put a little water in the bottom and it kind of helps the parchment paper stick so I just have a few on the bottom
Here and then just a few more on the top so you’ve kind of got blueberries throughout all right we’re going to put this in a preheated 375° oven and it’s going to take about 35 40 minutes until the center is set and then we let it cool for a little bit
And then we’ll be ready to serve all right right here we go just came out of the oven uh we’re going to let it cool and then I’m going to slice it up into nine slices and then I’m going to give it a taste here we go finished product
Looks really delicious so let’s give it a try I don’t know if you can see if it’ll adjust M so good it’s got a really delicious vanilla flavor with the pure vanilla extract and then my vanilla protein powder you can really taste that so if you like vanilla
You’re going to love this it’s a little bit sweet but not too sweet so this is a perfect after dinner little treat or something you can take to work with you for a snack it’s about 300 calories per serving and you’re getting about 17 g of protein
