This salad is a celebration of colour and taste, featuring a medley of mixed heirloom tomatoes, fragrant basil, and crispy homemade croutons, all drizzled with a mouthwatering olive oil and balsamic dressing.

Ingredients:

500g Mixed Heirloom Tomatoes (The more variety, the better!)
100g Olive Oil
1 Clove Crushed Garlic
Basil Leaves
2 Slices Sour Dough Bread
Flake Salt
35g Balsamic Vinegar

Method:

1. Dice the sourdough bread, then warm a bit of olive oil in a pan. Add the diced bread and cook gently until golden. Incorporate the crushed garlic and season with salt. Once golden, remove from the pan and drain on paper towels.

2. Slice and cut all the heirloom tomatoes, then layer them onto a serving dish, seasoning with salt as you go.

3. Drizzle the olive oil and balsamic vinegar over the tomatoes, and garnish with fresh basil leaves and the crispy croutons.

Pro Tip: We used a variety of tomatoes for this salad, including mixed-colored cherry, Ox heart, green, and yellow heirloom tomatoes. The more diverse your selection, the more delicious the salad!

Foreign today we’ve been asked to do something with heirloom tomatoes now you can’t find these everywhere but your local fruit and veg shop will generally stock these now these are super super special there’s so much care taking in growing these these tomatoes are so packed in flavor and texture they’re just nothing

Like them we’re going to keep it super simple today with this salad the best thing to do is get a huge variety of tomatoes all of them you can find we’ve got a heirloom it’s green red yellow black Russians we’ve also got mixed cherry tomatoes there’s so many colors

And varieties out there that’s what’s going to make this salad great so the prep the large Tomatoes we’re just going to slice cherry tomatoes just cut in half the shallots thinly sliced or diced depends how you like it and then also the basil we’re just going to keep it

Whole for the salad we’ll just do some quick sourdough croutons it doesn’t have to be sourdough any bread you’ve got left over just a rough dice I like leaving the crust on Just into a pan a little bit of olive oil Flake salt and we’ll Crush some garlic into it as well this one’s super simple we’re just going to cut and put it straight onto the plate good idea to season as you go black Russians now again just nice wedges this salad is really good if it’s dressed probably about half an hour
