Chickpea 1 cup
Green onion 1/2 cup
Tomato 1/2 cup
Iceberg 1/2 cup
Cucumber 1/2 cup
Carrot 1/2 cup
Dressing
Olive oil 2 tbs
Lemon juice 1 tbs
Salt to taste
Red chilli flakes 1/2 tsp
Crushed cumin 1/2 tsp
Chopped garlic 1 tsp
Green coriander 1 tbs
Oregano 1/2 tsp
INSTRUCTIONS
1. Add chickpeas in bowl
2. Finely chop the green onions, dice the tomato, iceberg,cucumber, and carrot. Place all the prepared vegetables in a large salad bowl.
3. In a small bowl, whisk together olive oil, lemon juice, salt, red chili flakes, crushed cumin, chopped garlic, oregano and fresh green coriander. Ensure the ingredients are well combined.
4. Pour dressing over the salad ingredients.
5. Gently toss the salad to ensure that the dressing evenly coats all the ingredients.
6. Serve the chickpea salad immediately, or refrigerate for a short while to let the flavors meld.
