The okan sweet potato has a much lighter coloring on its surface than any other sweet potato that I’ve ever seen and as you can see it hides a beautiful Deep Purple flesh it tastes very similar to the sweetness of the Japanese sweet potato which I had described as very
Similar to roasted chestnuts skin doesn’t taste that bad either it’s a little musty the blue coloring in these potatoes are an antioxidant what makes this healthy is the same thing that makes blueberries so good for us these are also extensively grown in Hawaii so sometimes they’re called Hawaiian sweet
Potatoes it did take a considerably longer time to cook than it would have any other sweet potato of a similar size a Japanese sweet potato of this size would have taken about 45 minutes to an hour this took an hour and a half might have something to do with the starch
Content but still what I would do is I would bake a whole bunch of these between 350 and 375° F for about an hour and a half then I would store them in the fridge so they’re ready when I want them but otherwise they’re so good plain
