Here are two healthy salads, one made with Kale, carrots and tomatoes. The other is a twist on a traditional Mediterranean salad with cucumbers, tomatoes, and red onions. Also I have a huge life update to share with you all!

Healthy when you really hav’t meal planned um which has been my reality honestly um I haven’t found a rhythm yet with pre-prepared meals and by meals I don’t mean whole meals I meal I mean parts of meals um because from the research I’ve done I know for sure that

Head that I I want and I go to the grocery store and I get them so this is kind of like stuff that I’ve pulled out of my fridge okay that I need to use okay and this is what I mean like you know we had a a bountiful thank you

Yeshua Bountiful Harvest of cucumbers so we’re making a cucumber salad we’re making a salad with cucumber in it um we’re gonna figure out something um you know short of canning them okay uh I got my my purple kale in this bag and a jalapeno from my dad’s

Garden God knows when I brought these so you know I think this is cilantro from my garden this is some aspar guess that I’m probably going to put in the pasta that I’m making today so I’m making some pasta but I wanted to start um this I got some uh organic

Uh shredded carrots which you know when you use organic things it’s wonderful but let’s let’s use them asapp brish okay kale okay I’m going to show you guys how I rub it down and prepare if you’re not used to having kale as a base of one of your salads so I’m going to

Wash all this produce and then hopefully I’ll get some close-up shots with the phone um you know these types of videos are not easy to do which is why I haven’t done them yet but we’re going to we’re going to try it today is the day so kale salads up

Next all right beautiful peoples we’ve got all of our produce washed I washed I got some feta cheese here that I’m going to use in the salad because we got to use it um that leak is actually going to go in my pasta and I’m going to make a

Tuna salad with this um may put it in the salad too the asparagus is going in the veggie pasta as well and so is this pepper but we were just washing everything here are all of my herbs um the purple basil the Rosemary and cilantro that are homegrown baby and

Then um the carrots are good to to go so first I’m going to do the olive oil on here and then I’m going to um put a little bit of this lemon juice in there you can put some in a top but I do like a splash this is a lot of

Kale so and I’m going to massage away guys so again you guys um this just breaks down some of the roughage of your cake and makes it more smooth and more tolerable to the palette okay you guys so I have my cucumber salad here and my a kale with

All of the things in there let me give you guys give you guys um a closeup of that so this is the carrots I put some peppers in there um I’ve got a bunch of my stuff for the pasta over here but it was a big

Pepper so I put some of it in the kale salad with cucumbers and tomatoes and then the cucumber salad it’s going to be kind of like my Israeli cucumber salad um I’m going to chop up a red onion and put that in there and then we’ll do the

Dressing and all things for this and this this salad I’m going to make a salad dressing for this probably going to use Ranch and a homemade um salad dressing cuz this was probably going to last me for a couple of days um this is going to be my cucumber salad kind of

Like my Israeli salad with the Cucumbers tomatoes and the Red Onion I also have a bunch of beautiful herbs up and Har um I have some Rosemary and cilantro and purple basil to go with my purple onions um and this uh basket is for my pasta I’m going to use this just

FYI um give this a try so I usually use chickp pasta but I’m going to try this whole wheat P um yeah and here’s my feta cheese that I also need to put over here over there I’m not going to put in there right now so your SP spes that’s what

I’m going to put in this okay this is a sumach okay it’s like a citrusy type of spice that’s common in uh the Middle East um that sort of thing and then zotar which is also common in like Mediterranean dishes um even Middle Eastern um but yes so I’m

Going to do this inside that one and then I’m going to put some olive oil in there we’re just going to have some fun okay okay oh can youall see my smoke situation bless the Lord for your food especially when you grow it yourself that is so cool and

Amazing so let me take a cute picture of this for you guys and um call it a day okay so so for this mamama Jama this baby is really big we’re going to rinse these off for this particular salad I’m going to get a container so this is some anchovies you

Guys you can use omit this if you do not if you know you’re not filling it um I’m going to make a little bit of a paste and take the olive oil I have um flat Fila an chovies in olive oil and I’m going to use that olive oil since

Olive oil is in the recipe but it’s another vinegarette with uh lemon juice and uh I think salt pepper and Dijon mustard so okay hopefully we can y’all and I’m choking I didn’t realize as I’m editing this video I did not realize that I say that in the video where’s my

Husband you basically smooth down your knife like you do when you’re mincing garlic if you don’t know like how to make a past okay we have the anchovies smash you guys in there And now what we’re going to do is add the Dijon must mustard Okay so we’ve got a little bit more olive oil in here if you want to drain the anchovies of their liid olive oil and do that then you know knock yourself out um and again

You can’t omit the uh you can actually omit let me add a little bit more lemon juice I’m just going for memory I saw a chick on YouTube make this I think her name is Bri Turner she made a similar kale salad she called it a million doll

Salad um which I see why because it’s power packed okay and then we’re going to maybe do some um salt and pepper I don’t really remember the seasonings but we’re going to do the pepper and then what we’re going to do is let’s do some sea salt there what we’re going to

Do um cuz the anoes are quite salty so don’t put too much um but if you’re omit omitting them then you know knock yourself out okay so I’m going to shake this shake shake shake shake shake shake shake shake your dressing hopefully this does not bust

Let’s do this near the sink just in case make sure okay with my look okay you can use any type of mustard you like you got to emulsify it okay so emulsify and chovies are a great anti-depressant they’re also considered uh a great source of all your
