SLOW COOKER BARBACOA BEEF RECIPE | SCRUMPTIOUS SUNDAY

4 lb Beef Roast (cut into 3” cubes)
1 Onion (diced)
3-4 Chipotles in Adobo Sauce (finely diced)
1 Tbsp Garlic (minced)
1/4 C Fresh Lime Juice (I use 4-5 small)
2 Tbsp Apple Cider Vinegar
1 Tbsp Cumin
1/2 Tbsp Oregano
Salt & Pepper
1/4 tsp Ground Cloves
3/4 C Beef Stock (chicken works too)
3 Bay Leaves

Add everything into a slow cooker / crock pot & give it a stir… then cook on low for 7-8 hours or on high for 3-4. Once done cooking, shred with 2 forks & serve however you like! We love on a salad, in a taco/burrito, as a sandwich, over rice or even just along side of your favorite veggies! ENJOY!!
