Do you like cauliflower? What do you say about a cauliflower spread/dip? Let’s start! We need one medium sized head of cauliflower. Chop the cauliflower into large florets or break it apart with your fingers. Place a steaming basket into a pot, add enough water to cover the bottom.

Place the florets in the basket. Cover with a lid, bring to a simmer. Let’s simmer /steam for 25-30 minutes. To test pierce the cauliflower with a fork. When is done it should pierce easily. Transfer to a bowl and let them cool down slightly. Smash using a potato masher or using a fork.

Season with salt to taste. Add 1/4 tsp ground black pepper. 1/2 cup mayonnaise. 1/2 cup soy yogurt. Mix and combine all the ingredients. Add 1 tbsp lemon juice. Taste and adjust seasoning if necessary. Store it an airtight container in the fridge for up to 3 days.
