I make a big batch of this chopped salad and keep it in the refrigerator for any night that I want something bright, full of citrus flavor, and super delicious!
INGREDIENTS
– 1 bunch kale, chopped
– 2 cups cooked quinoa (1 cup uncooked)
– 1 hothouse cucumber, diced
– 3/4 cup chopped red onion
– 1/4 cup chopped fresh dill
– 1/3 cup chopped fresh parsley
– 1 can (15 oz) chickpeas, rinsed and drained
– 1 lb roasted chicken, shredded
– 2 lemons, juiced
– 1/3 cup olive oil
– 1 tsp kosher salt
– 1/2 tsp black pepper
INSTRUCTIONS
1. Add the kale and hot cooked quinoa to a bowl. Stir together and allow the kale to wilt slightly.
2. All of the remaining ingredients and mix to combine.
3. Serve immediately or chilled.
