Bienvenidos and welcome to another episode of Spain  on a fork today we’re making a pasta dish that’s   not only packed with a ton of flavors but it’s  actually very healthy for you we’re talking a   creamy spinach and garlic pasta now beauty of this  recipe is two things the first one is that it’s  

A one pan dish meaning the pasta get’s cooked in  the same pan as the rest of the ingredients that   way the starch stays in there which gives  it the most incredible texture and flavor   and for the second one we’re going to be using  Greek yogurt instead of heavy cream making this  

So much healthier yet still giving us that  beautiful creamy goodness folks we’re talking   super easy to make the simplest ingredients and  all done in about 30 minutes alright let’s   just dive right into this I’m going to heat a large fry pan with a medium heat 

And add in 3 tbsp of extra virgin olive oil which is 45 ml  important to use a great olive oil here as its   what flavors all the ingredients link where can get  the Spanish one I’m using in the description box below

In the meantime I’m going to finely  chop one shallot and roughly chop six gloves of garlic then we’ll add the chopped  ingredients into the hot fry pan and we’ll mix the ingredients  around continuously that way they   don’t brown too quickly and  everything evenly sautes after 2 to 3 minutes and the ingredients are  

Lightly sauteed I’m going to add in 2  teaspoons of dried oregano which is 2 grams half a teaspoon of dried  thyme which is half a gram   and season with sea salt and freshly cracked black pepper and we’ll give it a mix  until it’s well mixed together

Then we’ll add in three cups  of vegetable broth which is   720 ml you can also use chicken broth  here beef broth or even water either   way link on how to make my homemade  veggie broth in the description box below and we’ll turn it up to  high heat and give it a gentle mix

Once it comes to a boil it’s time to add in  the pasta I’m using penne pasta here but you can   use whatever pasta you like I’m going to measure  out 8 oz which is 225 grams and add it into the pan

And you don’t have to mix the  pasta around continuously but do get   under every 2 minutes or so that way it  doesn’t stick together and it all evenly cooks in the meantime I’m going to  grab 5 oz of fresh spinach which is  

150 grams and roughly chop it as always  I’m using fresh bagged spinach here as   you know I love this stuff because it’s  pre-cleaned and affordable but you can   also use frozen spinach just make sure  to fully thaw it out and pat it completely dry

Okay let’s move back to the pasta after  cooking it between 8 to 9 minutes and you can see   a lot of that broth has been absorbed by the pasta  but there’s still plenty of liquid left we’ll add  

In the chopped spinach and you don’t have to mix  it into the pasta just place it over it in a flat layer and then we’ll place a lid on the pan  and lower it to a low medium heat and simmer  

It between 3 to 4 minutes this is enough time  for that pasta to be cooked aldente important to   check the package instructions in the pasta that  you’re using and for that spinach to be perfectly steamed after 3 to 4 minutes we’ll turn off  the heat and remove the lid and we’re going  

To let this sit here for a few minutes that  way it can slightly cool off and this is a   good chance for you to try the pasta to ensure  it’s perfectly cooked through if you see it  

Needs more time just place the lid back on the  the pan and let it steam for a few minutes   once the ingredients have slightly cooled off about  3 to 4 minutes I’m going to add in one container  

Of plain Greek yogurt at room temperature the  size of the container I’m using is 150 g which   is a little over 5 oz and very important for that  yogurt to be at room temperature if you add it in   there chilled it will curdle you can easily  veganize this recipe by using a plant-based yogurt 

And then we’ll season the yogurt with sea  salt and a generous portion of freshly cracked   black pepper and like i’ve told you in the past that black  pepper brings out an incredible flavor in the yogurt and we’ll give it a mix  until it’s well mixed together  

And if you see that your cream sauce is  too thick just add in some more broth in there and you can serve this directly out of the pan  or transfer it into some serving dishes either way   check it out our creamy spinach and garlic pasta is done heart healthy ingredients truly effortless to  

Put together and all done just just 30 minutes  let’s give it a try and see how it turned out so for those of you that follow Spain  on a fork you know I’m a huge fan of pasta  

Dishes especially one pan ones so this I am so  excited to try a little bit of everything here we go first things first that penne pasta is  perfectly cooked al dente so important   to check the package instructions in the pasta  that you’re using as for the flavors you have  

All that garlic that spinach and the Greek yogurt  giving it that beautiful creamy texture you saw   this so easy to make heart healthy ingredients and  done in just 30 minutes try it at home serve it   next to a crunchy baguette and a bottle of Spanish  red wine more specifically from the region of
