We are starting a series in which I will share various videos on Breakfast, Lunch, Dinner, and Snacks created by me and inspired by my children. I hope this series of videos helps you in the kitchen as you craft beautiful meals for your family.
I’m a homeschooling mom, so my days are busy! I try to feed my children healthy and balanced meals throughout the day. Today, Sophia and Cecilia wanted to share their lunch box.

…CAST IRON LASAGNA
6 Tbsp Extra Virgin Olive Oil (Coating Pan)
2 Onions, finely chopped
9 Garlic Cloves, minced
4 pounds of Ground Beef
96 oz Marinara Sauce
3 Tbsp Italian Seasoning Pizza Seasoning is also fantastic!
4 tsp Oregano
4 tsp Parsley
Salt and Pepper to taste
1 Cottage Cheese (16 oz)
2 cups Mozzarella
2 Cup Kerrygold Cheese
Lasagna noodles
Heat oven to 400°F.
Heat the oil in a cast-iron skillet over medium heat. Add the onion and sauté for 5-6 minutes until soft. Add the garlic and cook for a few minutes.
Add the ground beef and cook until no longer pink. Add the pasta sauce and all your seasonings, then simmer occasionally until everything is hot.
Transfer 2/3 of the meat sauce to a bowl, leaving 1/3 of the sauce in the skillet.
Lay half the noodles over the sauce in the skillet, spoon half the cottage cheese mixture, sprinkle some mozzarella and Kerrygold, then repeat with sauce, noodles, cottage cheese, mozzarella, and Kerrygold.
Cover the pan with parchment paper, then aluminum foil tightly, and bake until the noodles are tender, 30-40 minutes. You can take the parchment paper and aluminum foil off the last 15 minutes to brown the cheese or, after fully Cooked, broil the top if desired. So good!! Remove from the oven, and let it rest for a few minutes –
Garnish with chopped Parsley or fresh basil, and enjoy!

And pans it’s just one trusty cast iron skillet in a bowl here’s everything I use to make this dinner  boil onions garlic ground beef marinara sauce your choice of spices and Seasonings cottage  cheese Mozzarella and Cary gold cheese and don’t forget about the lasagna noodles bake at 400° for Â
