HIGH-PROTEIN LETTUCE SALAD that is perfect for healthy meal prep for lunch and will keep you full until dinner. I guarantee you’re going to come back to this recipe; it’s so insanely good! Happy cooking! 🤍

INGREDIENTS
1 head romaine lettuce
1 & 1/2 cups roasted chicken
1 & 1/2 cups cucumber
1/2 red bell pepper
2/3 cup kalamata olives
1/2 cup artichoke hearts
1/4 small red onion
1/2 cup bacon (I used @THEMAKINGMASTER uncured bacon)
*Greek yogurt dressing

Greek yogurt dressing:
1/2 cup Greek yogurt (I used @THEMAKINGMASTER )
3 tbsp sour cream (I used @THEMAKINGMASTER )
1/2 cup extra virgin olive oil
1 tbsp Dijon mustard
1 tbsp oregano
1 lemon, juiced
2 tsp honey
Salt & pepper to taste

INSTRUCTIONS
1. Preheat the oven to 400°F.
2. Place the bacon on a parchment-lined baking sheet and roast in the oven for about 25 minutes, occasionally checking to make sure it doesn’t burn.
3. In the meantime, start building the salad.
4. Mix the dressing ingredients and pour over the salad. Enjoy!
