Low Calorie, High Protein Creamy Mac & Cheese
✳️ Macros (makes 4 servings):
390 Cals, 43g Carbs, 11g Fat, 35g Protein
✳️ Ingredients for Pasta:
224g or 1 Container Banza Elbow Macaroni
4 Cups Water
9g or 3tbsp Fresh Chives (for topping)
✳️ Ingredients for Cheese Sauce:
84g or 7/8 Cups Freshly Grated Cheddar
21g or 3tbsp Freshly Grated Parmigiano Regiano
452g or 2 Cups Fat Free Cottage Cheese
120mL or 1/2 Cups Fat Free Milk
10g or 2tbsp Nutritional Yeast
3g or 1tsp Cornstarch (optional- for thickness)
2g or 1tsp Salt
2g or 1tsp Pepper
*fat free gives extra protein and lowers calories but full fat works as well*
✳️ Directions:
1. Boil a pot with 4 cups of water at medium heat. Add 224g or 1 container Banza elbow macaroni.
2. Add ingredients for cheese sauce in food processor, hand blender, or regular blender. Blend for 1 minute.
3. Strain macaroni once cooked.
4. Top macaroni with cheese sauce and 9g or 3tbsp fresh chives. Then enjoy!
