Date fudge
1 cup dates, pitted
½ cup almond butter
¼ cup coconut flour
Blend dates and almond butter until you achieve a smooth and creamy mixture. Add shredded coconut to thicken the fudge. Blend again. Line a small container with parchment paper, leaving some overhang on the sides. Transfer to the container, pressing it down firmly. Refrigerate for 1-2 hours and cut into cubes.
Mango treat
1 cup mango puree
Mango, cubes
vegan whipped cream or coconut cream can (refrigerated overnight)
Pure stevia
Use store-bought mango puree or blend fresh or frozen mango to make puree. Whisk cooking cream and sweetener. In a glass, alternate layers between mango puree and cream. Top with mango cubes.
Chocolate popsicle
1 can full-fat coconut milk
1/2 cup unsweetened cocoa powder
1/4 cup maple syrup or date syrup
In a saucepan over low heat, whisk together the coconut milk and unsweetened cocoa powder until they are well combined and smooth. Let it cool then transfer to popsicle mold. Place the molds in the freezer and let them set for at least an hour.
Chocolate tahini spread
½ cup tahini
1/4 cup unsweetened cocoa powder (sift to avoid clumps)
1/4 cup maple syrup (or date syrup)
Pinch of salt
Whisk together all ingredients. Spread on sourdough bread. Store in an airtight container.
High protein snack
Dairy-free greek yogurt
Peanut butter
Sweetener of choice (date syrup, maple syrup or stevia for sugar free)
Melted dark chocolate
Topped with fresh berries or cocoa nibs
In a bowl, mix yogurt, peanut butter and sweetener. Transfer to small bowls. Drizzle melted chocolate and top with fresh berries, cocoa nibs or any other toppings of choice. Refrigerate and enjoy.
Cheerios Treat
4 cups cheerios
1 1/4 cup peanut butter
3/4 cup maple syrup (or date syrup)
½ tsp salt
In a large bowl, mix peanut butter, maple syrup, vanilla extract and salt. Add cheerios and mix. Transfer to a tray, press down and freeze for at least 2 hours or overnight. Cut into pieces.
Banana Chocolate Bites
1 cup chocolate, melted
2 ripe bananas, sliced
mixed nuts (almonds or hazelnuts), finely chopped
Prepare tray lined with baking paper. Dip sliced banana in bowl with melted chocolate and scoop out using two forks. Place on tray. Sprinkle with chopped nuts. Refrigerate to harden.
Apple Fruit Rolls
5-6 apples, peeled and corked
¼ cup honey or other liquid sweetener of choice
1 tsp lemon juice
Peel and cork the apples. Add to a blender along with other ingredients. Blender until smooth. Transfer to a tray lined baking paper. Bake in the oven on the lowest heat for 4-6 hours or until fruit is no longer wet.
Strawberry Fruit Rolls
500g strawberries
¼ cup honey or other liquid sweetener of choice
1 tsp lemon juice
Add all ingredients to a blender and blend until smooth. Transfer to a tray lined baking paper. Bake in the oven on the lowest heat for 4-6 hours.
Choco-Nut Bites
1 cup dates, pitted
1 cup almonds
2 tbsp unsweetened cacoa powder + more for coating
Blend all the ingredients in a food processor. Scoop out and form balls then coat with cacao powder. Refrigerate to firm up for 30 minutes.
Chocolate mousse
300g silken tofu
150g chocolate, melted
¼ – ½ cup milk
In a food processor, add silken tofu, melted chocolate and milk as needed. Transfer to bowls and refrigerate.
