{RAINBOW RISOTO}
Ingredients:
~Three to four kinds of colorful vegetables (tomato, rainbow carrot, zucchini, leafy green such as spinach)
~Choice of protein: minced chicken or turkey or beef, or seafood (such as slices of fish, shrimp, or scallop)
~Rice and quinoa (optional)
~ egg (optional)
Steps:
1. Chopping up the vegetables into bite sizes
2. Rinsing rice and quinoa mix (optional)
3. Mix all the ingredients into a pot (except the egg), and add water (usually 4:1 water versus rice)
4. Turn on high heat first and close the lid
5. About 10 minutes later, when the water boils, open the lid and turn down the heat to medium-low. Thoroughly stir the soup to make sure nothing sticks on the pot
6. Close the lid halfway, let the soup simmer in low heat for another 10 minutes; stir often
7. Crack an egg and scramble it in the soup, close the lid half way and let it continue to simmer for another 5 minutes
8. Turn off the heat when the ingredients are smoothly mixed to a nice texture
9. Serve when it’s cooled down
