HEALTHY SNICKERS ✨ These are SO good! If you’re craving snickers bars, this easy protein snack is perfect for keeping on hand. I always love making a bunch of these and keeping them in the freezer for the week ahead! Here’s how to make the recipe:

– rice cake
– 1 Tbsp creamy peanut butter
– 1 Tbsp vanilla yogurt
– 1/2 Tbsp vanilla protein powder
– 2-3 Tbsp dark chocolate chips
– 1/2 tsp coconut oil
– flaky sea salt
– chopped peanuts
– chopped dates

Mix the yogurt and protein powder together. Top each rice cake with peanut butter and yogurt mixture, then place in the freezer for about 10-15 minutes. Meanwhile, melt the chocolate chips and coconut oil. Top the rice cakes with the chocolate mixture and immediately add flaky salt, peanuts, and dates. Freeze for 15-20 minutes to set, then enjoy!

To store: Keep them in the freezer for best results! I kept mine in the freezer (in an airtight container) for 2 weeks, and while the rice cake was a little softer, it was still delicious (and definitely not soggy). When ready to enjoy, thaw them out for a bit first!

Substitutions/Variations:
– Feel free to use PB2 with water instead of peanut butter.
– You can drizzle chocolate instead of covering the entire rice cake.
