We are making a crunchy and creamy Cajun chicken sandwich. We’re taking crunch to the next level by coating our chicken in crispy cornflakes and air-frying it until golden brown. This is more than simply a sensory feast; it is also a healthy option that does not sacrifice flavor. And, because we feel that a great sandwich is all about the sauce, we’ve created a velvety Cajun sauce with delectable ingredients like onions, garlic, red bell peppers, and cream, all harmoniously combined with just the proper amount of Cajun seasoning. We smother our chicken in this creamy and top it with a generous amount of shredded cheese. To bring everything together, we nestle this creamy, spicy, crunchy.
INGREDIENTS
• 2 Boneless Chicken Breast (Flatten)
• 1 Egg (Beaten)
• 2 cups Cornflakes (blended in a food processor)
• 2 tbsp Cajun Seasoning
• Salt & Pepper (to taste)
• 1 cup Chicken Broth
• 1/2 cup Crème Fraîche or Heavy Cream
• 1/2 cup Red Bell Pepper (Diced)
• 1/2 cup Onion (Chopped)
• 2 cloves Garlic (Minced)
• 1 tsp Parsley (Chopped)
• 1 cup Cheese (Shredded Mozzarella or Monterey Jack)
• 2 Baguette
INSTRUCTIONS
• Season the chickens with salt, pepper, and Cajun seasoning on both sides.
• Dredge them in a beaten egg and coat them with crushed cornflakes. Spray with oil on both sides of the chickens.
• Air-fry the chickens at 375°F for 15 to 20 minutes. Flipping halfway.
• In a large pan, heat 1 tablespoon of oil over medium heat. Sauté the onion for 3 to 4 minutes.
• Add garlic and cook for another minute. Add 1 tablespoon of the Cajun seasonings and stir for a few seconds.
• Add chicken broth and cream. Stir to reduce the sauce (till it simmers) and ensure it is well incorporated. Season with salt and pepper.
• Add diced pepper and cook for a minute.
• Add chopped parsley.
• Toast the baguettes and slice them in half lengthwise. Add the chicken and smother it with the Cajun sauce and cheese on top, in between.
