I lost 100 lbs Eating Keto Snacks



Baked in the Susie Lynn Test Kitchen 5.4.2024. My CGM reading 30 minutes after eating 1 cookie was 116. There was no glycemic effect at all!

KETO CHOCOLATE CHIP COOKIES
Recipe by Carolyn Ketchum of All Day I Dream About Food

NUTRITION: SERVING SIZE 1 COOKIE
Calories 157 kcal Fat 14g Carbs 5.2g – Fiber 3.2g = NET CARBS 2g Protein 3.8g

This is the only keto chocolate chip cookie recipe you will ever need. These tender low-carb cookies are so good, that no one will believe they are completely sugar-free with less than 2g of net carbs per serving!

Prep/Cook Time 35 minutes Servings: 18 cookies

INGREDIENTS
(Susie Lynn, Weight Loss Cheerleader’s notes in parentheses below)
 2 cups almond flour (200g)
 ¾ cup Swerve Brown (I used Truvia Brown Sugar)
 ½ teaspoon baking soda
 ¼ teaspoon salt (I sprinkled a bit additional on top after they came out of the oven)
 1 large egg
 ½ cup butter melted and cooled (so that the chocolate chips don’t melt)
 ½ teaspoon vanilla extract
 ½ cup sugar-free chocolate chips divided (I used Lily’s semi-sweet)
 ¼ chopped walnuts (optional) (I did not use)

INSTRUCTIONS
1. Preheat the oven to 325F and line a large baking sheet with a silicone baking mat or parchment paper. (I needed 2 baking sheets)
2. In a large bowl, whisk together the (dry ingredients) almond flour, Swerve Brown, baking soda, and salt.
3. Stir in the egg, butter, and vanilla extract until the dough comes together. Stir in half of the chocolate chips and the walnuts, if using. Roll into 1 ½ inch balls. (If they are not staying together as you roll them, pop them in the fridge to chill for 5 minutes)
4. Press the balls down to about ¾ inch thick (I used the bottom of my measuring cup). Don’t press down too much as these cookies will spread a bit on their own. Press the remaining chocolate chips into the tops of the cookies.
5. Bake 15 to 18 minutes until puffed and golden brown around the edges (I baked for 18 minutes). They will still be very soft. Remove from the oven and let cool completely ON THE PAN. (Don’t try to move them, trust me, they fall apart LOL)
