In this video, I’m making a perfect sandwich. Why did I call it a weekend sandwich?

You might need to spend a couple of minutes longer in a kitchen to make all ingredients but the effort is totally worth it. The sandwich is best when eaten warm. Also take your time eating and tasting all ingredients, from a crispy crust of a bun, melted cheese to flavourful sauces.

I make all sauces from scratch, e.g. hummus and guacamole but you can easily get yours from a shop.

For this recipe you will need:
2 heaped tbsps of hummus* (you can use already made one from a shop or follow my recipe below)
2 heaped tbsps of guacamole* (you can use already made one from a shop or follow my recipe below)
2 tbsps of mayonnaise
2 free range eggs
80 ml of vinegar
2 tbsps of cubed red bell pepper (approx. half a pepper)
2 tbsps of cubed carrot (1 big carrot or 2 small)
2 tbsps of cubed tomato (1 big tomato)
2 tbsps of cubed pickles (1 big pickle)
2 buns
4 slices of cheese

Recipe for Hummus:

2 cans of chickpeas or 200g of dried chickpeas*
2 tbsps of olive oil
2 heaped tbsps of tahini
1 clove of garlic
1 tsp of lemon
1 tsp of salt
1 tsp of pepper
2 tsps of ground cumin
2 tsps of ground coriander seeds
1/2 or 1 tsp of chilli (depending on your tolerance to hot spices :))
1 tsp of smoked paprika
1 tsp of sweet paprika
1/2 of toasted sesame seeds (I used black and white)
cup of fresh coriander leaves

Blend all ingredients for a smooth paste. If it is too dry (though it shouldn’t), add some cold water.

*You can either use a can of chickpeas or cook them yourself: add a teaspoon of bicarbonate soda and leave chickpeas soaking in water over night; next day cook them for one hour or until tender

2 ripe avocados
1/2 cup of fresh coriander
1/2 tsp of ground cumin
1/2 tsp of ground coriander seeds
1/4 of chilli
juice from 1/2 lemon
To garnish, 1 heaped tbsp of toasted almond flakes
