Skinny White Chicken Enchiladas 😍

These Skinny White Chicken Enchiladas are filled with chicken & salsa Verde and are topped with a creamy white cheese sauce that is actually healthy!

They are super low calorie and high in protein. There are over 30 grams of protein per enchilada!

These are not only an awesome healthier alternative to traditional white chicken enchiladas, but I honestly think they taste even better. They are so easy to make and you can meal prep them ahead of time for an easy weeknight dinner! 🍽️

👩🏻‍🍳INGREDIENTS:
For the Enchiladas
8 tortillas
1½ lb chicken breasts (cooked & shredded – I used @trifecta precooked & shredded chicken🙌)
1 cup green salsa verde (@siete is super clean & what I use!)
1 tsp cumin
1 tsp chili powder
Salt & pepper to taste
Cilantro (for serving, optional)

For the Enchilada Sauce
2 cups @kettleandfire organic chicken bone broth (code COOKINGKATIELADY for a discount)
1 cup organic plain, nonfat Greek yogurt
7 floz green chilies (fire roasted)
½ tsp cumin
Salt & pepper to taste
1¼ cup shredded cheese
1 tbsp butter
1 tbsp flour

Try my homemade sourdough tortillas! You can use carb counter tortillas for a low cal option too)

Skinny Chicken Enchiladas

Combine chicken, salsa verde, cumin, chili powder, salt & pepper in a bowl & divide into 8 tortillas. Roll up & place in baking dish.

Make sauce on stove. Make a slurry w/ water & flour. Add broth & bring to a boil. Reduce heat & add remaining ingredients. Pour over enchiladas. Bake at 375° 25 min.
