For this recipe, you’ll need:
2 eggs,
2 scallions,
1 1/2 tablespoons of finely chopped onions,
2 inch piece of carrot,
some butter,
salt and pepper
And for a little extra kick, I’m adding some curry leaves and a green chili, but these are totally optional.

First up, let’s prep our veggies. Finely chop the scallions, onion,green chili, and curry leaves. For the carrot, I’ll grate it to get those nice, small pieces that will cook quickly and blend well in our omelette.

Step 2: Beat the Eggs

Now, grab a bowl and crack open those eggs. Add in our chopped scallions, onions, green chili, curry leaves, and grated carrot. Season with a pinch of salt and pepper to taste.

Give everything a good mix until it’s all nicely incorporated.

Step 3: Cook the Omelette

Let’s move over to the stove. Heat up a non-stick pan over medium heat and add a bit of butter. Once it’s melted, pour in our egg mixture. Spread it around to form a nice, even layer.

Cook for about 2-3 minutes until the edges start to lift, then flip it over gently. We want a lovely, golden brown on both sides.

Step 4: Assemble the Sandwich

While our omelette is finishing up, let’s get our bread ready. You can use any bread you like, toasted if you prefer.

Place the cooked omelette onto your bread, fold it to fit, and top it with the other slice. And there you have it, a hearty and flavorful Breakfast Omelette Sandwich!
