These have been going around for a while, so I’m a bit late to the party, but I couldn’t resist sharing these delicious snack ideas, with the sweet banana addition.

What’s great about these rice cake treats is that they only take 5 minutes to prepare a bunch. Plus, you can store them in the fridge for a couple of days, perfect for whenever you crave a healthy satisfying snack

Ingredients:
1 rice cake
1/2 banana or other fruit of choice (optional)
2 tbsp peanut butter
1 tbsp crushed toasted peanuts
2 tbsp dark chocolate
Sprinkle of salt

*double or adjust quantities based on how many rice cakes you want to make

Instructions:
1. Begin by spreading peanut butter evenly over the surface of a plain rice cake.
2. If you like, slice half a banana into thin rounds and arrange them on top of the peanut butter layer.
3. Melt dark chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth.
4. Drizzle the melted chocolate over the banana and peanut butter-covered rice cake.
5. Sprinkle sea salt and crushed toasted peanuts over the chocolate-covered rice cake for added crunch and flavor.
6. Allow the chocolate to set for a few minutes by putting it in the fridge before indulging in your homemade peanut butter cup rice cake!
