Feeding 11 Kids: Healthy & Simple Lunch Box and Snack Idea
I’m a homeschooling mom, so my days are busy! I try to feed my children healthy and balanced meals throughout the day. Today, we are making homemade sourdough cheese and herb crackers, which are perfect for lunchboxes or snack time! My kids added some to our Chicken Noodle Soup, too! So good!

Sourdough Cheese and Herb Crackers –
Ingredients-
1 1/2 Cups Sourdough Starter (or sourdough discard)
1 1/2 Cups All-Purpose Flour
3 tsp Salt
1/2 Cup Grass-Fed Butter softened
3 Cups Sharp Cheddar Cheese, Cubed
2 Tbsp Dried Herbs (Rosemary, Thyme, Basil, Sage, & Lavender)
Method-
1. Add all your prepared ingredients to the food processor and blend until well combined and the mixture forms a dough.
2. Take a large piece of parchment paper and place the batter in the center of it. Grab it by the corners and place it in a large glass bowl. Put the bowl in the refrigerator and allow it to chill for 2 hours. This batter can be stored for up to 48 hours.
3. When you’re ready to bake the sourdough crackers, preheat the oven to 350°F. Take a baking sheet lined with parchment paper and set aside.
4. Remove the sourdough cracker batter from the refrigerator and allow it to sit for 20 minutes. Remove a small amount at a time if you make a larger batch. Otherwise, the batter can soften too much and become more challenging to work with.
5. Place a piece of parchment onto the counter (this will prevent the counter from getting dirty, and flour is not needed). Flatten the dough to about 1/8” thick.
6. Take your cracker cookie cutter and cut out as many little animals or shapes as possible. As you cut, place the cut-out crackers onto the baking sheet.
7. Bake sourdough Crackers for 10-12 mins or until the bottom is golden brown.
8. Remove from oven and allow to cool. Once cooled, place in a jar and refrigerate the crackers. Enjoy!
