come with me to make a quick healthy and easy Mediterranean inspired lentil salad first thing I did was I started with one cup of dry lentils and put that into a rice cooker with 2 cups of bone broth then I just went ahead and push start and let that cook as normal then while that cooks I’m going to add my veggies I am doing one bell pepper a cucumber Red Onion hearts of palm and olives I’m just adding those into my veggie Chopper to make sure everything is nice and consistent in size and small then once my vegetables are chopped I’m going to mix those into the bowl and add in one can of chickpeas we’re going to stir that around and then get going on the dressing for this dressing I am doing 1/4 cup of olive oil 3 tpoon of lemon juice 2 tpoon of Honey 2 taspo of Dijon and salt and pepper to taste I like to mix that around and enjoy this with crackers I hope you enjoy
