Nutty Dark Chocolate Bites

Ingredients:

Almonds: 40g

Cashew nuts: 40g

Walnuts: 40g

Dark chocolate: 150g

Instructions:

Roast the Nuts:

Place a skillet over low heat.

Add the almonds, cashew nuts, and walnuts to the skillet.

Dry roast the nuts, stirring occasionally, until they are golden and fragrant (about 4-6 minutes).

Remove the roasted nuts from the skillet and set aside to cool.

Prepare the Dark Chocolate:

Break the dark chocolate into small pieces.

Set up a double boiler: Fill a saucepan with a few inches of water and bring it to a simmer. Place a heatproof bowl on top of the saucepan, ensuring it doesn’t touch the water.

Add the chocolate pieces to the bowl and stir occasionally until completely melted.

Once melted, remove the bowl from the heat and set the melted chocolate aside.

Grind the Nuts:

Once the roasted nuts have cooled, transfer them to a food processor.

Pulse the nuts until they are coarsely ground. Be careful not to over-process; you want small pieces, not a fine powder.

Combine Nuts and Chocolate:

Add the ground nuts to the melted chocolate.

Stir well until the nuts are evenly coated with the chocolate.

Mold and Set:

Pour the chocolate and nuts mixture into a silicon mold, spreading it evenly.

Place the mold in the refrigerator for about 20 minutes or until the mixture is set.

Finish and Garnish:

Once set, remove the chocolate from the mold.

Place the chocolate pieces on a plate.

Garnish with a drizzle of melted chocolate and a sprinkle of your choice (optional: sprinkles, sea salt, or cocoa powder).
