Full written recipe for Onion rings
Prep time: 20- 25 minutes
Cooking time: 25-20 minutes
Serves: 4-5 people
Panko breadcrumbs
Ingredients:
• White bread slices as required
Method:
• Panko breadcrumbs are specifically made from white part of the bread, to make them, first trim off the sides of the bread slice, and further cut the white part of the bread in cubes. Do not discard the sides as you can use them to make the normal bread crumbs that are finer in texture. You simply have to grind them in the grinding jar and further toast on a pan until the excess moisture has evaporated, you can use the finer bread crumbs not only for coating but also as a binding agent in many recipes.
• Further transfer the bread pieces in a grinding jar, use pulse mode once or twice to break down the bread pieces. Do not grid to much as we need the texture of the bread to b a little flaky, grinding more will make them into powder like consistency and that’s not what we want.
• After pulsing it for once or twice, transfer the bread crumbs over a pan, and on low heat, toast it while stirring continuously, the main reason to do is to evaporate the moisture from the bread. You would see steam coming out while toasting and that denotes the moisture presence in the bread.
• You need to toast it until the entire moisture has evaporated, but make sure the colour shall not change even slightly.
• Once the moisture has evaporated, transfer it over a plate and cool down, as the crumbs cool down, store it in an airtight container and it stays good in the refrigerator for couple of months. Use them accordingly.
Dips
Ingredients:
Special onion ring dip
• Mayonnaise ½ cup
• Ketchup 3 tbsp
• Mustard sauce 1 tbsp
• Red chilli sauce 1 tbsp
• Garlic paste 1 tsp
Garlic dip
• Thick curd 1/3rd cup
• Mayonnaise 1/3rd cup
• Powder sugar 1 tsp
• Vinegar ½ tsp
• Fresh coriander 1 tsp (finely chopped)
• Garlic paste ½ tsp
• Salt a pinch
• Black pepper a pinch
• Cold water as required
Achari dip
• Mayonnaise 1/3rd cup
• Achar masala 1 tbsp
Method:
• For special onion ring dip, add all the ingredients of the dip in a bowl & mix well, your special onion ring dip is ready, refrigerate until you serve.
• For garlic dip, add all the ingredients of the garlic dip in the bowl & mix well, you can adjust the consistency by adding cold water, if your crud is not too thick you can avoid the addition of the water, your garlic mayo dip is ready, refrigerate until you serve.
• For achari dip, simply mix achar masala and mayonnaise, your achari dip is ready, refrigerate until you serve.
Making of onion rings
Ingredients:
• Onion big size as required
For batter
• Refined flour 1 cup
• Cornflour 1/3rd cup
• Salt to taste
• Black pepper a pinch
• Garlic powder 1 tsp
• Red chilli powder 2 tsp
• Baking powder ½ tsp
• Cold water as required
• Oil 1 tbsp
• Refined flour to coat the rings
• Salt & black pepper to season the breadcrumbs
• Oil for frying
Method:
• Peel the onions and cut them in 1 cm thickness, separate the layer of the onions to get the rings.
• Remove the membrane which happens to be a very thin layer which is transparent & on the inside wall of every layer of the onion, try to remove if possible as it’ll make the surface a little coarse and it’ll be easy for the batter to stick.
• For making the batter, take a mixing bowl, add all the dry ingredients, and mix once, further add cold water and whisk well, add enough water to make a semi thick lump free batter, further add oil and whisk again.
• As all the components are ready, add little flour in a bowl to coat the rings, take another bowl & add the prepared panko breadcrumbs in it, season it with salt & black pepper, give a mix, keep the batter bowl next to it.
• Start by coating the rings with dry flour, shake to remove excess flour, further transfer in the batter bowl and coat it well, use a fork & lift it so the extra coating falls down in the bowl, immediately coat it nicely with seasoned panko breadcrumbs, make sure do not press while coating with crumbs as we need the texture to be flaky and crumby, let it rest for a while.
• Set oil in a wok for frying, deep fry them coated onion rings in hot oil on medium flame until its crisp & golden brown in colour.
• Remove it over a sieve so the excess oil drains off, your crispy onion rings are ready.
• Serve hot with the prepared dips or you can be creative by making your own dips.

Sanjyot Keer here Welcome to YFL Firstly, this is the first recipe of 2022 Happy New Year to you guys 2021 was an amazing year & I shared loads of recipes with you all Even for this year, I’ve planned a lot of recipes, tips, techniques & a lots more has been planned & we’re going to share all these videos with you one by one, So stay tuned for it Today, I’m going to share the recipe of how to make ‘The Perfect Onion Rings’ at home, with you all that too with home-made bread crumbs I’ll show two types of bread crumbs Firstly Panko bread crumbs & our regular basic bread crumbs How to make both of these at home, in a simple way, I’ll share that technique with you all Along with that, onion rings are served with dipping sauces Not one, but I’m sharing the recipe of 3 different dipping sauces Firstly, the ‘Classic Onion Ring Dipping Sauce’ then, ‘My Special Garlic Dip’ & lastly ‘Achari Mayonnaise’, how it’s made which tastes too delicious with these onion rings I’m also sharing recipes of all these dips too with you in this video It’s quite a simple process, & results in very crispy & crunchy Onion Rings First of all for Onion Rings, let’s see how to make home-made bread crumbs Here, I have yesterday’s slightly stale white bread I’ll cut out it’s sides & separate the sides For the Panko bread crumbs version, only the white portion of bread is used the sides are not used Keep these sides aside, don’t discard them. I’ll tell you what to do with them later After cutting the sides, cut the bread into smaller pieces It has to be cut so that when it is ground in mixer grinder then easily it can be ground, so cut it into smaller pieces I’ve cut the bread. Now transfer it to a mixer-grinder jar & grind it You have to coarsely grind it, & for that use the pulse mode Pulse mode meaning it should switch on & off at quick intervals Don’t just keep grinding continuously, otherwise the texture of your bread crumbs will be very unappetising Panko bread crumbs are coarse, unevenly coarse & we want a similar coarse texture not a powdery texture Now, you can see that I’ve ground the bread & it’s texture as you can see is quite coarse & uneven. You want just this texture This texture will give great Panko bread crumbs Now, we have to make this ground bread into bread crumbs & for that it has to be toasted To a pan, add the bread crumbs & toast it on a low flame slow & steady On the lowest flame, really slowly, toast this bread while mixing Slowly you will see that the steam or moisture inside the bread will escape out & your bread crumbs will dry out One thing that you have to keep in mind is that Panko bread crumbs are always white in colour don’t let it’s colour change To achieve that, you will not keep the flame high, it has to be the lowest & keep stirring constantly If you don’t mix then the bottom layer will cook faster & top layer will stay raw & we don’t want that Continue mixing & swirling the pan & like that, slowly your bread crumbs will dry out & leave out all it’s moisture Now, as you can see, my bread crumbs are ready Transfer it to a bowl & let it cool nicely Once your bread crumbs have cooled down, then your bread crumbs will be ready. So our Panko bread crumbs are ready. You just saw how simple it is to make bread crumbs at home & packaged Panko version is quite expensive in the markets At home, you can easily make it with stale bread or fresh bread & simply they are ready in 10-15 minutes & with this you can make a lot of things. Of course Onion Rings, but you can use it to coat other things too Recently, I had also used Panko bread crumbs even in my Veg Burger video So they were the same home-made Panko bread crumbs So from next time you also make it at home just like this You can store it in air-tight container in refrigerator for upto 1-2 months without them going bad & they provide an amazing texture Now for our other type of basic powdery bread crumbs I don’t use them a lot But since we already have the sides ready, it’s very easy to make normal regular bread crumbs with these sides so let me show you that as well I’m not going to use them later in this video, but let’s quickly see how to make these breadcrumbs too So with the remaining sides, add them to a mixer-grinder & grind them very well Grind it on a pulse mode only, but this time you don’t need coarse texture, make it completely powdery So grind the bread well, & now you can see that it’s become powdery in consistency Now, just like we had toasted the Panko bread crumbs on a low flame, in a pan You have to toast similarly. Toast slowly for 10-15 minutes You will notice similarly your bread will leave moisture & steam will escape out & slowly your bread crumbs will also shrink in volume & will dry out too & will get to a powdery consistency Turn off the flame at this stage Transfer the bread crumbs to a bowl to let them cool & then your regular bread crumbs will be ready too Now, our regular bread crumbs are ready too So, today, I’ve taught you how to make both varieties of bread crumbs Now for this recipe, I specifically use Panko bread crumbs only I don’t use normal bread crumbs There are reasons for that Firstly, let’s see them side by side. These are Panko bread crumbs & other are normal bread crumbs Normal bread crumbs are very powdery in texture & panic bread crumbs have a coarse & uneven texture Now, due to this coarse texture, when we coat anything with Panko bread crumbs the surface has a lot of highs-lows, uneven Those places with highs & lows or nicks & turns They become really crunchy & that gives a very airy texture So this is the reason of using Panko bread crumbs over the regular bread crumbs Regular bread crumbs give you a flat texture, & not that crustiness as well as airiness Now, here just to show you all, I’ve fried two onion rings One is the version with Panko & other with regular bread crumbs You can see how different these textures are how the crust with Panko is looking crunchier & there’s so much texture on it Now, you just saw how different both these onion rings are So, I always use only Panko bread crumbs for onion rings & in this recipe too, I’m going to use Panko bread crumbs You can use the regular bread crumbs for tikkis, or other things & can store it & use it in other recipes So here, our process of bread crumbs is over now Now for next step before making the onion rings, we have to make all the 3 dips First of all let’s make the Classic dipping sauce which is served with onion rings In a bowl, take 1/2 cup mayonnaise 3 tbsp ketchup 1 tbsp mustard sauce 1 tbsp red chilli sauce & add 1 tsp garlic paste & mix very well I’m using a whisk here. Whisk everything very nicely into this dip All ingredients should combine well Now, you can see, my dip is mixed well, it’s pinkish orangish in colour & our Classic Onion Ring dipping sauce is ready. & it tastes really delicious with onion rings Now, the next dipping sauce, is my special garlic dip Let’s see how to make it Into a bowl add 1/3rd cup hung curd with it, 1/3rd cup mayonnaise 1/2 tsp garlic paste 1/2 tsp vinegar 1 tsp powdered sugar add 1 pinch of salt add 1 pinch freshly cracked black pepper some freshly chopped coriander leaves Now I’m adding some chilled water to it. I’m adding ice-cold water to adjust the consistency Now, you have to mix this really well It’ll be better to use a whisk, although I used a spoon here Now, I’m using a whisk to mix it well You may need to adjust the consistency with water, only if the hing curd is really set well If you aren’t using hung curd & using just normal curd otherwise be careful, it’s consistency will become quite watery then Using hung curd gives it a very creamy consistency & later on by adding ice-cold water, you can adjust it’s consistency Now, slowly I’ve mixed it all You can see that there are no lumps of curd & the consistency of our dip is also absolutely perfect So at this stage, our garlic dip is ready Now, the third dip is Achari Mayo, Let’s see how to make that Into a bowl, add 1/3rd cup mayonnaise Along with that I have some Pickle Masala here The basic mango pickle that you have, take just the masala part of it Now, to this I’m adding 1 tbsp pickle masala Mix it well similarly Use a whisk to mix everything really well We have to add the flavour of the pickling spices to the mayo Any mango pickle that you have at your home, you can add the paste or masala part of it to this mayo If you want it to have more flavour of the pickle, increase the quantity of the pickle here & if you want to pickle flavour to be subtle, then add lesser quantity of the pickle By just adding these two ingredients, our Achari Mayo is ready & this tastes really delicious too Now only one thing is left Finally we have to make the Onion Rings Let’s see how this process is done Here, I’ve peeled some large sized onions Now, we have to slice them While slicing, basically, you have to cut 1 cm thick slices For a large sized onion, you can cut it into around 3 slices & make nice 1 cm thick slices Now, separate rings from these slices Remove the centre & then separate the surrounding rings one by one Separate all the onion rings The centre that we removed, don’t discard it You can use it in gravies or where onions can be chopped & used Leave it aside, don’t throw it away Now, for the onion rings that we just prepared, there’s a membrane on inner side It is a translucent/transparent membrane, just like this I’m removing it now If you are able to remove it easily at your home, then do it It helps in texture as the flour easily sticks to the onion after that If you are unable to remove it, or it’s too difficult, it won’t make a major difference, you can leave it on too So now onion rings are ready here. You can see they look like perfect 1 cm thick onion rings. Cut them just like this & your onion rings will turn out really nice & one more thing to keep in mind while cutting onion rings is don’t cut too thin or too thick either otherwise the texture of your onion rings won’t be perfect 1 cm is the ideal thickness, so cut the onion rings in the same thickness Now, after cutting the onion rings, we have to coat it with bread crumbs But how will the bread crumbs stick to the onion rings? So, we have to make a batter, so we’ll dip the onion rings in the batter & coat the onion rings with bread crumbs To make the batter, in a bowl, take 1 cup refined flour 1/3rd cup corn flour & add 1/2 tsp baking powder along with that 1 tsp garlic powder 2 tsp red chilli powder add salt to taste After adding all the dry ingredients together, mix it well Now to this you have to use ice-cold water gradually & with the help of a whisk, mix it very well Gradually add water & mix it until a nice batter is formed You have to keep the consistency of the batter semi-thick Don’t keep the batter too thick or thin Make the batter of a semi-thick consistency Hence add water very slowly, if you add all together then the batter will be too watery Now, you can see, I’ve mixed the batter really well There are no lumps & the consistency is perfect I usually add a spoon of oil in the batter too, that I forgot about So, here, I’ve added 1 tbsp vegetable oil After adding the oil, I’m rapidly mixing it & our batter for Onion Rings is ready So now all our components are ready Now, it’s the turn to coat the onion rings To coat the onion rings, we’ll arrange an assembly line So, for that, firstly I’ve taken refined flour in a bowl here, our second bowl will be our batter & third bowl is our Panko bread crumbs that we made at home today Season the Panko bread crumbs with salt & pepper & mix it well Seasoned bread crumbs give a much better taste on the coating So here, our assembly line is ready Now, take an onion ring & dust it with refined flour lightly & remove the excess flour by tapping Now, immediately you have to add these onion rings in the batter Coat it nicely after adding to the batter & lift it with a fork Once you lift it, let the excess batter drip off for 1-2 seconds & after that immediately, you have to add the onion rings in the bread crumbs Quickly coat the bread crumbs on it Turn it over & coat again You don’t need to press the bread crumbs on the onion rings Whatever bread crumbs stick on the batter spontaneously, you have to add only so many bread crumbs on the onion rings Now, you can see our onion ring is perfectly coated Similarly you coat all the onion rings & on a tray or a plate, rest it for 2-3 minutes before frying I’ve coated all the onion rings here & I’ve prepared the oil for frying too My oil is heated upto 170 degrees Celsius Meaning it’s moderately hot, it’s neither too hot nor too cold You have to fry the onion rings in this If your oil is too cold then the coating of onion rings will be too oily & onion rings won’t become crunchy If the oil is too hot, then the bread crumbs will brown really quickly but the batter inside won’t cook well Even then, your onion rings won’t be crunchy So add all onion rings in moderately hot oil & on medium high heat, you have to fry them until they turn into nice golden brown colour & very crunchy Now, you can see, nicely & slowly, I’ve fried it on a medium flame Onion rings are golden brown in colour & are crunchy too At this stage remove the onion rings from the oil & add to a sieve & let the excess oil drip off & our perfectly crispy & crunchy onion rings are ready now So our perfectly crunchy & crispy onion rings are ready now & along with that our 3 dips are ready too Now, let’s plate these onion rings YFL style… This is really an amazing recipe of onion rings & if you like onion rings then this recipe makes superb onion rings I also taught you how to make Panko bread crumbs & you get amazing results by coating the onion rings in Panko bread crumbs So try making it just like this All the three dips that I showed you, looks really nice Especially if you are serving them to guests, serving 3-4 dips along, it looks really appetising & you get different flavours in each bite So similarly try making all the 3 dips too I’m sure you’re gonna love this recipe Do try it at home & let me know in the comments, how you liked it Share this video with your friends & family Hit the Like button if you’ve liked this recipe Follow & Subscribe to YFL if you haven’t yet Have an amazing time with this onion rings recipe at your home.
