30+ Grams Protein QUICK + EASY LUNCH 👇🏼

To me, this lunch IS summer. Perfect for meal prep and packed with protein, flavor and texture – this is truly my ideal summer lunch. AND it actually keeps me full until dinner!!

This is the Chicken Waldorf Salad recipe from the The Real Food Dietitians – it’s my favorite!!

INGREDIENTS:
✔️Cooked Chicken (my favorite is using leftover grilled chicken)
✔️Grapes (must be red grapes in my opinion!)
✔️Celery
✔️Red Onion
✔️Cashews (the recipe calls for walnuts, I just like cashews more!)
✔️Basil
✔️Mayonnaise
✔️Fresh Lemon

MAKE IT:
👉🏼Chop cooked chicken, grapes, celery and red onion into bite-sized pieces. Mix together in a large bowl with basil, mayo and fresh lemon juice. Store covered in the fridge for up to 4 days (PERFECT for meal prep!).

SERVE IT: I like mine scooped into a pita pocket – my favorite is the @foodforlifebaking whole grain pockets! I get them at Hy-Vee! You also could serve over a bed of greens or with crackers!
