HEALTHIEST CHEESECAKE (No Sugar, No Biscuit, No Butter, No Cheese, No Maida) – No Bake Cheesecake

Ingredients:
For Oats Walnut Crumb:-
1 cup Rolled Oats (alternatively regular oats can be used)
10-15 Walnuts
7-8 Seedless Dates (can soak the dates if they’re too dry)
1-2 tsp Extra Virgin Coconut Oil
For Filling:-
1 cup Paneer
1/2 cup Hung Curd
Pinch of Salt
7-8 Seedless Dates
Few drops of Vanilla Essence
Few drops of Lemon Juice (optional)
Chopped Mangoes & Pistachios (for garnish)

Method:
Dry roast 1 cup Rolled Oats & 10-15 Walnuts in a pan
Turn off the heat and let it cool down
Transfer this mixture in a chopper
Add 7-8 Seedless Dates
Add 1-2 tsp Extra Virgin Coconut Oil
Coarsely crush this mixture in a chopper
Further take small glasses
Add a layer of oats mixture and keep aside
Let’s Make Cheese Filling (without cheese)
Take 1 cup Paneer in a mixer jar
Add 1/2 cup Hung Curd
Add a pinch of Salt
Add 7-8 Seedless Dates
Add few drops of Vanilla Essence
Add few drops of Lemon Juice
Grind this mixture smooth
Transfer it in a piping bag
Put it in the glass over oats crumb
Garnish with chopped Mangoes & Pistachios
Sprinkle a little Oats Walnut crumb
Refrigerate for 2-3 hours and serve chilled

Whenever someone asks me about my favorite dessert, I always say I love Cheesecake. But I hesitate to eat it and have it once or twice a year. Unless I hadn’t made this one. Cheesecake generally has many calories in it. Today I’m making my favorite cheesecake which has no biscuit, no butter, no sugar and no cheese. And in my house it is called Cheat Cheesecake. First lets make a base for Cheesecake. Normal cheesecake base is made of biscuit crumbs and lots of butter. But we are replacing biscuit wiht oats and nuts. Take 1 cup rolled oats. You can take the normal oats too. We will dry roast them mildly. Lets dry roast them mildly. After sometime the color of oats will turn dark. And you will get nice aroma. That means Oats are roasted well. Oats are roasted. You can see they are a bit dark and there is a nutty aroma too. Now add 10-15 walnuts. Roast walnuts too mildly. There is a myth about walnuts that it can be eaten only in winter and not in any other season. Its not true, in fact walnuts are loaded with Omega 3 and iron. It is good for your heart. You cannot eat walnuts as it is but if added in recipe like this, kids will not know they have eaten it. Walnuts are also roasted mildly. Turn off heat and let it cool. Now take oats and walnuts in a chopper and make a coarse powder. If you do not have chopper, you can use mixer jar but run on pulse mode. For sweetness, add 7-8 dates. You can soak them and use if they are very dry. This is extra virgin coconut oil, add 1-2 tsp of it. The dates I have taken are very soft and I have removed its seeds If your dates are hard, then soak them in hot water and use with that same hot water. If you do so, you will not need to add this extra virgin coconut oil. I’ll give you a tip about Dates. Many people do not know that dates should not be kept in refrigerator. It gets hard when you keep them in refrigerator. Dates should be kept in room temp in kitchen cabinets and they have a long shelf life. Oats and dates mixture are grounded coarsely well. Its looking same as biscuit crumbs. This Cheesecake is made in individual glasses. I have small glasses like this. In its base, lets set the crust we have made. Set the crumbs in the base of the glass and then tap the glass slightly. In Cheesecake after adding biscuit crumbs, we press them. But I’ll not press here. This crust will get merged with the cheese filling which we will make and will be tasty. So just tap lightly. Now lets make cheat cheese filling but with no cheese and no sugar. Take 1 cup paneer. This is homemade paneer. You can buy from the market and use. This is hung curd. Take normal curd and tie to a muslin cloth and leave overnight in refirgerator. So excess water has drained and thsi is 1/2 cup hung curd. Add a pinch of salt in this. Adding salt will enchnace the sweetness. For the sweetness, I’m using dates here again. This 7-8 dates finely chopped. I’m repeating again this is soft dates. If your dates are hard, soak them in water and use. The proportion is 1 cup paneer and 7-8 dates. You can adjust the quantity of dates as per taste. Just make sure not to make this Cheesecake very sweet as we will be adding fresh fruits on top. Fruits will be sweet and the base is sweet too. Now add a few drops of vanilla essence. Lastly add a few drops of lime juice. this is optional. But when you taste cream cheese, you will get mild sourness. This few drops of lime juice will do the same work. But you can avoid it completely. You can do the same in mixer jar on pulse mode if you do not have a chopper. Today the cheat cream cheese we are making is very plain. we have added only vanilla essence for the flavor. But if you want to give it a fruity flavor, then add fresh mango pieces and give it mango flavor. You can add fresh strawberries too or add raspberies. Amazing cream cheese is ready. No one can tell there is no cream cheese in this. Take the cream cheese we made in a piping bag so we can spread it well. Now layer it on top of the crust. Lastly place some fresh mangoes on top of Cheesecake. You can use strawberry or raspberry or anything of your choice. Add some finely chopped Pistachios. Lastly sprinkle some walnut crumbs which we had made on top. Healthy, Delicious, No Biscuit, No Butter, No Sugar and No Cheese Cheesecake is ready. Before serving this Cheesecake, place it in refrigerator for at least 2-3 hrs and enjoy chilled. This Cheesecake is so yummy. Once you make and have it, You will never ever have that high calorie cheesecake. Too Good.
