This cookbook is obviously beautiful but I really wanted to test out the technique of searing maitake mushrooms with 2 cast iron pans. This is something The Sarno bros have mastered and it makes mushroom clusters super meaty and charred… yum!
After we do a little trial and test on those maitake clusters I’m making the Spicy Maitake Steak Sandwiches from the brand new cookbook which is out May 8, 2018! The sandwiches have kimchi mayo, jalapeños, pickles, lettuce, cilantro, vegan cheese, and a tasty bulgogi marinade on the maitake mushrooms.
