an extra 5 days of sleep a year these breakfast burritos are a wonderful choice for a meal prepped breakfast you can make them throw them in the freezer and then have morning eats in about a minute or school because you can eat on the clock and it makes time go by faster so let’s get into it let me show you how to make these breakfast burritos starting with the sausage i like to make my own sausage out of turkey for a leaner option so to a bowl add one pound or 454 grams of 937 ground turkey and add to it one teaspoon or six grams of salt and then one teaspoon or three grams of the following ingredients black pepper onion powder garlic powder cayenne pepper and smoked paprika to the bowl also add one teaspoon or one gram of oregano one and a half teaspoons or two grams of rub sage and then one tablespoon or 12 grams of brown sugar get in there with your hands and mix everything together so that the spices are well incorporated throughout that meat and then you can set this aside until we’re ready to cook it if you didn’t want to mess with making this you could obviously just buy a pound of breakfast sausage from the store next up get your eggs ready for later so crack 8 large eggs into a bowl and add in 2 tablespoons or 30 grams of milk beat all that together until everything is smooth look i use weight measures for everything including liquids so there’s no need for you to comment who measures liquids in grams it has to be mils because guess what it doesn’t matter and i don’t care you don’t have to be jealous because i measure hip-hop style and you don’t nothing i’m using in the kitchen anyway has a density that is too far different from water so for all intents and purposes one gram equals one centimeter cubed equals one milliliter anyway and plus when you put it on the scale and change the units from grams to milliliters guess how it converts those units the same way now back to business time to get everything missed out so we are ready when it comes time to cook take one medium green pepper or 150 grams and one medium red pepper or 150 grams and cut them each into a small dice by cutting around the seed capsule cutting each piece into strips and then slicing across those strips to create the dice you’re also going to want to cut one medium sweet onion or 200 grams worth into a small dice as well and for an extra splash of some green vegetables i also like to add in 5 ounces or 140 grams of spinach that i roughly chop into smaller pieces this is just going to wilt down when it cooks and it won’t even be noticeable and now that your sausage eggs and vegetables are ready to go get out a large skillet place it over medium-high heat and add in 1 tablespoon or 15 grams of oil then you can pour your turkey sausage right into the center and begin to brown it whenever i cook ground meats i like to spread them flattened in the bottom of the skillet and i don’t break them up until they’ve had a chance to take some of that heat when you break it up right when you put it into the pan too much water gets released from the meat and it will steam instead of brown that’s why you get gray turkey that is flavorless and gross instead of the brown bits of meat that dance on your tongue so resist the urge to break this up right away and give it a chance to develop some color cook it until no pink bits remain and then remove it from the heat and store it aside until later when it’s done back in that pan over medium-high heat you can add another tablespoon or 15 grams of oil and then pour in your onions and peppers allow these to cook down brown and release some of their water salting them lightly right when you put them in the skillet will encourage some of that water to come out faster stir everything around a bit every couple of minutes to ensure even cooking and once the onions begin to become translucent you can add in 2 cups or 170 grams of frozen shredded hash browns next you can add in all that chopped spinach that we cut up earlier and allow this to wilt down and cook i know some of you guys overseas have mentioned in the past that it’s hard for you to find the frozen shredded potatoes where you live just know that any kind of potato will work in this recipe if you need to cut up some regular potatoes into a small dice and boil them for a bit that’s going to work just fine next create some room in the center of your pan turn down the heat to medium and add in 1 tablespoon or 15 grams of oil and then pour your beaten eggs right into the center cook these eggs until they have solidified into a lightly scrambled egg to do this i like to break my spatula across the bottom of the pan and take up any of the cooked eggs and push them to the center and i repeat this process until everything has finished once the eggs are about done i season them lightly with salt and pepper and then i mix everything together so it’s well combined and now finally you can take your cooked sausage pour that into the center and mix that in as well once everything has been stirred and well combined give it a taste test and adjust with salt and pepper as needed this is going to be your burrito filling so you want to make sure that it is right before you put it inside of each tortilla now before you go filling those tortillas you want to make sure that this filling has cooled at least to room temperature otherwise it’s going to create steam inside of the tortillas and it’s going to leave too much moisture once that filling is cooled you can construct your burritos i got 17 total burritos out of this recipe so take out 17 nine inch tortillas and lay a group out to prepare for filling i then placed two huge spoonfuls which equated to be about 70 to 80 grams worth of the filling onto one side of the tortilla then on top of the filling goes a little bit of shredded cheese for the entire recipe and all 17 burritos i used 1 cup or 120 grams of shredded cheese which equated to be about 7 grams per burrito with a 9 inch tortilla you definitely have more tortilla than is necessary but i find that any tortilla smaller than this just becomes a pain to wrap and i’m already bad enough at folding them as you can see here i messed around for far too long trying to find the best way to wrap these i experimented with folding in the sides first and then rolling over the top for this first one i tried rolling over the top and then folding in the sides just get the job done any way you can continue on with this filling and rolling game until you have used up all of your filling as you roll the burritos place them into a baking dish or on a sheet pan with the seam side down so that they stay together you’re going to want to place these into the freezer before you bag them so that they can freeze individually first if you end up making more or less burritos out of the filling i’ll put a little calculator on the recipe page on my website just for the filling so that you can add in the tortillas separately to match whatever you used so say you wanted to make them a little bigger and you ended up with 14 burritos you’ll then put 14 servings into the calculator for the filling and then add in the nutrition estimates for your 14 tortillas on top of that or maybe you wanted to use a smaller diameter tortilla to save a bit on calories as i mentioned earlier these nine inch tortillas are plenty big but if you’re more confident in rolling and feel that you can use a seven inch tortilla have at it after you’ve got all the burritos rolled they are ready to move to the freezer so you can take that baking dish or your sheet pan and place it directly into your freezer to allow them to flash freeze until they are solid i just throw it on top of everything else in the freezer and make it work if you’re not going to vacuum seal these you can probably skip the flash freezing step for the vacuum sealer it’s nice to freeze everything first so that it is solid otherwise when you suck out all of the air it will squeeze the water out of everything as well when it comes to storing things inside of snack city in my freezer i have been exclusively using to reheat it i recommend wrapping the burrito inside of a damp paper towel to ensure that the tortilla doesn’t get hard in the microwave by damp paper towel i mean i take a paper towel i crumple it up into a ball and i saturate it with water and then i squeeze out all the water this helps it cook a bit faster too these only need about 60 to 75 seconds in the microwave straight from the freezer and while it’s reheating you can reseal the bag take out all the air with a vacuum pump and move it back into snack city after it’s done reheating in the microwave you can remove it from that paper towel and it is ready to eat if you followed this recipe exactly and made 17 breakfast burritos each one has about 349 calories and 16 grams of protein now let’s say you wanted to lessen the caloric load there are some super easy ways you could do this without sacrificing much you could use liquid egg whites in place of the whole eggs you could use a smaller tortilla or you could use cooking spray in place of the oil during the cooking process and if you wanted the opposite and you needed more calories i would just recommend eating two or three of these they are super palatable and easy to eat so
