Lemon Dijon Chicken Salad

We came across this recipe at a cooking class a few years ago. You can add balsamic vinegar to it if you want, we just choose to not add it and enjoy the Dijon flavor a little more.

It’s really simple to make, and is a great way to still use my smoker to add even more flavor. Hope you enjoy the video and make it yourself!

Ingredients:

1 1/2 tablespoons Dijon Mustard
1/4 cup of extra virgin Olive Oil (infused)
Chicken breasts
Loaf of your bread of choice
1/4 cup of Parmesan Cheese
Seasoning
1 Lemon (for juice and zest)

hey welcome back to our Channel but yeah we making a salad man we trying to eat healthy around here um we we went to this cooking class me and my wife we went went to this cooking class about 3 4 years ago and they taught us how to make U it was actually a New York steak and a salad but this the salad part and then we just added chicken to this just trying to you know what I’m saying just trying to be healthy uh but I season with Tony’s right here U Tony is hot and salt so I don’t really add a whole lot of that but right here I got my um my own salt pepper garlic seasoning I made it myself like I just buy the pepper individually the salt individually garlic individually I just kind of put it in there on my own I you I kind of play with it cuz you know you can really mess it up but once I got it down man it’s it’s real real good I use it on everything briskets ribs these just chicken I mean everything we going to use it in here a few times we got this long piece of piece of bread from uh from HB and uh you know Kathy watch all these Tik toks so she making this um making all croutons so this the croutons right here cut that bread up and then you cut it up even more have a have a big or have a small you want it you know we eatting salad so we’re trying to you know trying to get full um but so when you add it to the whatever you going to cook it in um make sure you add enough olive oil you know we added olive oil like two or three times but basically you want to coat it all with olive oil and then add whatever kind of seasoning you want to add to it so these croutons so we want to add garlic to it obviously but we can add whatever kind of seasoning you want to it you just do your own thing [Music] [Music] hey but when you’re doing your chicken I mean you can do it how you want I mean we like smoke flavor so I me I got a Offset Smoker but I like cooking my my U my chicken breast not directly over the heat as you see but kind of off to the side just so we can still get that fire like to let that fire heat it give it the little Char you know around the end of it but you can you do however you want you can actually do this just in the oven if you want to but I do mine on the pit just cuz I like firing up my pit and that’s that’s just the best thing to me um but right here when you put your cheese on your crout tons don’t stir it don’t just leave it on Top If You Stir It Up that cheese going to hit the bottom of your pan it’s going to be stuck it’s going to burn on the bottom like you see right here so just put it on top we we learn that just by doing it so put it on top and don’t even mess with it but yeah man hey whenever you doing meat get you a thermometer man that’s going to make all your meat be juicy every single rip like right here you see 170 cook I mean yeah chicken cook is at 165 but all of them was above that so I’m trying to get it right at 165 but you know I could it on per man ain’t no really telling but um making your salad dressing I don’t know how much Dijon mustard this is while we filming it so you can actually see how much maybe what’s that like a tablespoon and a half maybe and get you some olive oil we use infused with garlic olive oil um but you can use whatever you want get you a whole lemon squeeze all of that in there and then just mix that together mix it together you can add however much um parmesan you want to it um C A add a whole lot but I mean you can add however much you want to it but just mix it all together and then you ready to go with your salad dressing [Music] hey I tell you this one thing I learned over these years when you let that meat rest off that pit let it rest like it least like an hour man look all like it’s like all the juices sit in there and it make it better but that’s kind of what I learned so I took this chicken off man I let it kind of rest for a minute but when I cut my my my chicken up for this salad man I wouldn’t I really wasn’t trying to do nothing too big just cut it into little cubes it’s kind of how I like to eat it on my Fork but cut it into the cubes or you can eat it you can just kind of like slice it in half if you want to but just put it in your salad man and you good to go hey I I’ll tell you this here too whenever you um making a salad man it’s best to just get you a bowl like that and don’t like just pour it over on the plate because you can mix it like that right here like my wife she mixing it in a bowl like that look at it flying all over the place but she mix it in the bowl and just keep turning it and it and eventually every single bite going to have that salad dressing on it we I learned that again learned that with this salad right here but every single bite going to have that going to have that salad dressing on it and then you just add your cheese add your meat you can even do tomatoes if you want to we just ain’t do all that but you can just add whatever you want to to your salad man it’s going
