Ingredients:

Basmati rice – 1 cup
Onion – 1
Ginger – 1 inch
Garlic – 4 cloves
Coriander leaves – 5 sprigs
Mint leaves – a handful
Cinnamon – 1 inch
Cloves – 4
Cardamom – 1
Bay leaf – 1
Potato – 1
Turmeric powder – ¼ tsp
Water – 2 cups

Method:

Wash and soak the rice for an hour.
Grind ginger, garlic, coriander leaves, mint leaves together as a paste. Heat a cooker with 1 tbsp of ghee and 1 tbsp of oil, add cinnamon, cloves, cardamom, bay leaf, chopped onion and fry until it gets translucent. Add the ground paste and cook until the raw smell leaves. Add the cubed potato and mix. Add the turmeric powder and mix. Add the soaked rice and fry for a minute. Add the water, salt and mix everything together. Pressure cook it for 1 whistle on medium flame and simmer for 5 minutes. Let the pressure release naturally. Mint Pulao is ready.
