[Music] today I’m sharing with you some delicious spring rolls that I cannot get enough of and we have some non-vegan taste testers or maybe right here cuz I don’t think she’ll actually taste test but welcome to Summertime healthy vegan Mama Channel summer [Music] kind of hot in here so I have been eating these spring rolls so much lately it’s just become like a lunch staple for me I would say the last couple weeks not only are they delicious they’re filling they’re satisfying they’re full of nutrients they’re full of protein and healthy carbs and I got to say like most of my family enjoys eating them except my daughter just being honest she’s kind of picky now if you find that your family doesn’t want to eat these this is a great meal that you can quickly whip up for yourself while you are making your family their own meal if you’re new here you might have kind of gathered from the intro but I am the only vegan Whole Food plant-based Dieter that actually lives in my house everyone else isn’t 100% plant-based right for the most part I try to give them plant-based Foods only here in the home but it doesn’t always work work out that way and outside of the house they’re definitely not vegan plant-based and we’re okay with that but something to keep in mind if you find yourself in that same situation is make sure you always have your staple foods in stocks whether that’s cucumbers tofu these rice paper wraps so you can make what we’re about to make today potatoes frozen vegetables frozen fruit fresh fruit fresh vegetables rice pasta bread whatever it is that you find you like to eat a lot make sure you always have that in your house so you can quickly make a delicious satisfying meal like this when you find yourself having to make something separate for your family so okay there’s another pair of goggles hanging up in the [Music] bathroom this is just the way it’s going to go this summer and I’m cool with it now let’s make some of these yummy spring rolls now I want you to notice I am going to be making these next to my sink because I am going to be taking shortcuts here I love quick and easy meals so instead of taking a bowl of warm water out dipping the wrapper in it we’re just going to go ahead and hold the spring roll wrapper under the hot water right it just saves us a step so I’m going to be putting tofu shredded carrots cucumber and rice in my spring rolls you can put whatever you want right now I am slicing up three uh pretty thin pieces of tofu this is probably maybe a fourth of an entire block of tofu and I’m going to be Marin marting that in a little bit of low sodium tamari and popping that in the microwave I’m also then going to be taking some frozen rice probably about a cup to make three of these spring rolls defrosting that and while those two things are in the microwave I’m just going to go ahead and slice up some cucumbers I love to use a potato peeler for this and kind of slice them up this way I think not only does it like distribute the flavor of the Cucumber evenly with each bite of the spring roll it also wraps up really pretty with these on the outside so and then I like to give the leftover to my dogs all right so I’m going to be placing everything for the wrappers on this cutting board because you want to be ready to go after you put these under the water and kind of um they kind of get really soft right once you place them down on a cutting board or I like to do actually kind of like a slippery plate once you place them down they will start to get sticky so you want to make sure you’re ready to build these spring rolls really quick so I like to have everything prepared and ready to go now as we’re putting these under the warm water you see how this still a little stiff I like to keep these soft but a little stiff and then I put them down I Pat them dry with a towel and then I start to build them I like to put the Cucumber first like I said because when you wrap these up it’s really pretty but you can assemble them any way you like now like I said I like to do I said like a slippery plate um I like this better I’ve made these before on a cutting board but because these wrappers do get sticky pretty quickly I find that they really really stick to my wooden cutting Bo cutting board so I like to just use a plate because it is more slippery and it’s easier to just make these and roll them up and there you go we have our first one look how pretty it’s amazing now I’m going to go ahead and just show you me making the rest of them just so you can really understand this process and how I’m doing it but it’s really easy and not difficult at all [Music] ah [Music] now for a sauce we’re just going to be making a little like kind of like a Thai peanut sauce dressing I don’t know I’m just kind of calling it that and instead of using real peanut butter I like to use this PB fit peanut butter powder and kind of add water to it and make it like sauce you can use regular peanut butter of course and you can use as much as you want um I just do a little bit of powder add some water and then I like to add this sweet little bit of sweet chili sauce and there you have it okay let me get them look at these how delicious they came out are you ready to try these this is our handy dandy cameraman by the way is that good mhm would you eat that mhm okay tell them not me it’s a non-vegan that’s pretty good pretty good huh e okay they’re actually pretty awesome to take with you too if you find that you have to go on a road trip or you’re going to someone’s house and you know that there’s going to be food there that you don’t like or you don’t want to eat you can actually pop these in some Tupperware and take it with you he’s not lying that’s good all right that is it for
