hi I’m Kira from my fussy eater if you’re new to my channel welcome please do subscribe I make two new videos a week lots of familyfriendly kid-friendly recipes and also hints tips and tricks for feeding fussy eaters so today I’m going to share with you one of my super simple dinner recipes and something that I make all the time for my family it’s sausage and Butterbean casserole it’s also really healthy dinner to make for your family it’s Pack full of protein from the beans and also I sneak in some carrots for some extra nutrition okay so let’s get started the ingredients that we’re going to need for this are 1 tsp of oil eight sausages now I’ve used pork sausages in my recipe today but you can use any kind of sausages so chicken turkey or great and of course vegetarian work really well too one medium onion and that’s a white onion and finely diced two cloves of garlic which we will crush two medium carrots finely diced we’re also going to need a tin of chopped tomatoes and that’s about 400 G or 14 oz we need 1 tbsp of tomato puree 200 mil which is about 8 oz of either chicken or vegetable stock half a teaspoon of paprika half a teaspoon of mixed herbs and then finally we’re going to need one tin of cooked butter beans and again that’s 400 G or 14 oz okay let’s get making our casserole first up we’re going to add the oil to a large pan or a dish something that’s going to cook well on the hob we’re going to heat that oil and then add in the sausages we’re then going to fry the sausages probably for about 6 or 7 minutes just just until they’re kind of nicely Brown we’ll then transfer the sausages onto a plate and just set them aside for the moment into our pan then goes the diced onions which we’re going to cook probably for about 2 to 3 minutes just to get them a little bit soft if the pan seems a little bit dry you can add a little bit extra oil at this stage but it’s not necessary once the onions are starting to soften we’re going to add the diced carrots and also the crushed garlic and we’re going to fry that all probably for about 2 minutes we’re then going to add in in our tin Tomatoes the tomato puree the chicken or vegetable stock the paprika and also the herbs give everything a good stir and then we’re going to add back in those sausages that we’ve already half cooked now we’re just going to leave it alone we’re going to leave it to simmer probably for about 15 minutes on a low to medium heat give it a little stir every so often but it pretty much will take care of itself from here on in then after the 15 minutes are up we’re going to add the butter beans so drain the tin first add the bean St in give it a good mix and give it probably about four or 5 minutes more to cook just to let the beans heat through and that’s it our delicious sausage and butter bean casserole is ready you can add a garnish like uh fresh herbs like I’m adding some parsley but it really is up to you I like to serve my casserole with some crusty bread but rice works really well too so I hope you like my recipe if you did please do give it a thumbs up don’t forget to subscribe to my channel and go check out my fussy eater.com for lots more healthy eating recipes the whole family will enjoy [Music]
