[Music] a few weeks now then you would know that I featured this veggie lentil stew lentil vegetable recalling it veggie lentils – lentil veggies – veggie lentil stew yeah welcome back health nuts today in the kitchen we are making a lentil veggies – no veggie lentils do a veggie lentil stew a lentil veggie stew veggie lentil stew Frank I don’t know what to call it a lentil veggie stew wait lentil veggie stew or veggie lentil stew a veggie lentil stew lentil veggies – ok veggie lentil stew whoa hey health nuts welcome back to health nutrition today we are making lentil veggie stew and if you guys have been watching my channel then you know I featured this recipe in my nighttime fall routine that I did a couple weeks back and basically 80% of the comments in the underneath the video we’re like stew recipe because I didn’t even know what to call it I just called it a veggie or a lentil veggie stew and that is what I’m still calling it it’s delicious super easy to whip up it’s perfect on a cold fall or winter night when you just want something really warming that isn’t too fussy to make this is definitely the dish so I know you guys are gonna love this let’s just hop right in and I will show you guys how to make it for the ingredients you will need dried yellow split peas crushed tomatoes coconut milk I use the full fat filtered water a chicken or vegetable bouillon cube olive oils fresh cilantro a red bell pepper onion garlic cremini mushrooms ripe avocado lime juice and some spices I have some turmeric garam masala sea salt red chilli flakes black pepper and smoked paprika now to prep the split peas you’ll first want to rinse them well and then just soak them in a big bowl of water for about an hour this will just speed up the cooking process in a large saucepan I’m using this Dutch oven that Matt got me I’m loving it you just want to heat up the olive oil and sauté the onions on low to medium heat for a few minutes once that’s ready you can add in your spices this just really helps kind of bring up the flavors and it works really great in this dish anytime I’m using Indian flavors in a dish I always like to just sautee them first and then I add in the garlic I add in the garlic last because they find if I add it in with the onions it will usually burn at this point you can add in your split peas give it a good toss to make sure everything is well coated with all of the spices and then you can add in your crushed tomatoes I’m just using one can for this add in your water your veggie or chicken bullion cube and give it a good stir bring this up to a boil and then bring it down a low to medium heat and simmer for about 20 minutes the lid on next you can add in your coconut milk along with your red peppers chopped up mushrooms and give it a good stir just to mix everything together optional you can also squeeze in a little bit of lime juice and then you just want to cook it a little bit longer for about 25 minutes on low to medium heat just until the split peas are tender and cooked [Music] and once it’s done this is what it should look like I like to serve my veggie lentil stew with some brown rice basmati so I just cooked some in my rice cooker super quick and easy and then ladle on some of that delicious lentil stew top it off with some fresh chopped cilantro some cubed up avocado and finish it off with a good squeeze of fresh lime juice and there you have it a delicious veggie lentil stew recipe perfect for the colder months I know you guys gonna love this it’s been a staple in my kitchen and I hope you guys try it out and let me know what you think in the comments down below [Music] all right so that’s gonna be it for today’s recipe I hope you guys try out this delicious veggie lentil stew with your friends and family I know you guys are gonna love it and it’s so hearty and warming it’s like the perfect dinner or lunch to have during the cold winter months and I have so many delicious recipes to come this month in January like I’m already planning January I’m so excited so anyways I have a bowl here of my lentil stew I’m gonna eat this for dinner I hope you guys do the same and I will see you guys in next week’s video have a fabulous day bye [Music]
