Buffalo Chicken Bombs 🔥🐓💣
As a fan of buffalo chicken, I absolutely loved the way this recipe turned out! These are easy to make, packed with flavor and low in carb thanks to the Palmini lasagne sheets!

INGREDIENTS
– 1 package of Palmini lasagna sheets
– Avocado oil spray
Buffalo Chicken Mixture:
(estimated measurements)
– 3 cups shredded chicken
– 1 cup low fat shredded mozzarella
– 1/2 cup low fat cream cheese
– 2/3 cup sliced green onions
– Salt, pepper & garlic powder to taste
– 2/3 cup buffalo sauce of choice
Toppings:
– ranch
– chives
Note(s): Adjust ingredients to your liking.
DIRECTIONS
1. First strain and rinse the palmini lasagna then pat dry with a paper towel. Set aside.
2. Prep the buffalo chicken mixture by adding the chicken, cheese, cream cheese, green onions, buffalo sauce, salt, pepper & garlic powder.
3. Spray muffin tin with avocado oil and add in 2 lasagna pieces forming a “+”. Make sure to press them in but be careful not to break them. Fill each cup equally with the buffalo chicken mixture. Sprinkle extra cheese on top.
4. Bake at 425°F for 15-20 minutes.
5. Remove them from the oven and let cool for a few minutes.
6. Plate them up, add toppings & ENJOY! 🙌🏻
