1 tbsp of olive oil. Heat over medium heat until oil is shimmering. 1 small diced red onion. Cook 6-8 minutes until the onion is soft, stirring regularly. 28 oz canned whole peeled tomatoes. 1 cup water. Using the back of a wooden spoon, gently crush the tomatoes. 1 tsp garlic powder. 1 tsp dried oregano. 1 tsp dried basil. 1 tsp smoked paprika. 1 pinch black pepper. 1 pinch kosher salt. Mix well and bring to a boil. Once boiling, reduce heat and let simmer for 8-10 minutes. Turn off heat and allow to cool slightly before transferring to a blender. Blend until smooth. Return soup to the pot. 1/3 cup lite coconut milk. 1/2 tsp black Pepper. 1 serving = 1 cup. Exchanges = 2 fat. Souper tasty on a cold day!
