Broccoli Balls
Preheat oven to 350
Grease or spray mini cupcake tins
Ingredients:
Large head of broccoli (chopped in food processor)
1 cup breadcrumbs
1 -2 cups Parmesan and/or mozzarella (few cheeses that should be ok for heart health)
2 eggs (3 if mixture doesn’t bind together or if only using whites)
Seasonings: pepper, oregano, garlic and onion powder
Mix together in large bowl and roll into small balls to fit in cupcake tin
Cook for about 30mins , turning halfway through to brown all sides
*alternative to broccoli is zucchini
It has more moisture and needs less egg…the caveat is you have to squeeze out as much liquid after you shred the zucchini because too much and they won’t roll into balls
*zucchini gets shredded
*broccoli gets chopped
Add to a good marinara sauce and have over bed of healthy pasta
With SALAD on side. Put dried cranberries and some grapes in your salad to give it a healthy sweetness
