Ingredients
: 1 1/2 cup wheat flour
:1/4th cup besan (gram flour)
:1/2 cup kasuri methi
:1/4th cup yoghurt
:2 tbsp oil +oil for frying theplas
:1/4th tsp turmeric powder (haldi powder)
:1 tsp red chili powder
:1 tsp ginger and green chili paste
: 3/4th tsp sesame seeds
:1/4th tsp fennel seeds
:1/2 tsp hing (asfoetida)
:1/2th tsp ajwain (carom seeds)
:3/4th tsp sugar
:Salt as per taste
: water as needed for kneading
Steps
: In a bowl or a plate, add wheat flour, besan, kasuri methi, turmeric powder, red chili powder, ginger and green chili paste, sesame seeds, hing, fennel seeds, ajwain or carom seeds, oil, yoghurt, salt and sugar and mix all the ingredients well.
:Then add a little water at a time and knead into a soft dough ball the same way as we usually make a dough for chapatis or roti.
: Add a little oil and spread the oil onto the dough ball and cover it with a cloth. Let the dough rest for 10-15 minutes.
: Once the dough is soft, we will make dough balls as shown in the video to roll out theplas.
: With the use of a rolling pin, start rolling the theplas as shown in the video. The thickness of a thepla is similar to the thickness of a chapati. If you feel the dough is sticking to the base, sprinkle some wheat flour and start rolling again.
:Heat up a pan to a medium flame. Once the pan is heated, place a thepla on it and add a little oil on to the pan from the sides and let it cook for around 30 seconds before flipping it over. Add a little oil on the other side too and cook for another minute or two before flipping it back. Wait for another 30-40 seconds before serving it onto a plate. Repeat the same process for other theplas too.
Note
:Use oil for frying theplas instead of ghee in order to maintain the theplas soft at room temperature as well as in the refrigerator.
: Theplas stay good for 2-3 days at room temperature and therefore is a perfect travelling snack especially for kids .
