KANDE POHE

INGREDIENTS:

1 tbsp oil
1/2 cup of peanuts
1 tsp of mustard seeds
3-4 slit green chillies
A sprig of curry leaves
2 onions finely chopped
1 finely chopped tomato
1 “ finely grated ginger
1/2 tsp of turmeric powder
2-3 tsp of sugar
1 tsp salt to taste
2 cups of soaked mota/jada poha
1 tbsp of lemon juice
Freshly chopped coriander

METHOD:

Heat 1 tbsp oil in kadhai
Add 1/2 cup of peanuts
Sauté the peanuts for a minute or two
Remove them aside

Reduce the flame
Splutter 1 tsp of mustard seeds
Add 3-4 slit green chillies
A sprig of curry leaves
2 onions finely chopped
Sauté the onions for 2-3 minutes till they are soft and translucent
Add 1 finely chopped tomato
Add 1 “ finely grated ginger
Sprinkle 1/2 tsp of turmeric powder
Add 2-3 tsp of sugar to it
Add the roasted peanuts
Add 1 tsp salt to taste
Add 2 cups of soaked mota/jada poha
Mix it well
Cook the poha for 3-4 minutes on a low flame
Shut the flame, drizzle 1 tbsp of lemon juice
Sprinkle some freshly chopped coriander
Mix it well
Serve
