Classic Chicken Salad

I drop one of these super simple, healthy, high protein, prepable seared chicken salad recipes every single week and this week’s is a lighter, more summer-y version of a classic NY deli style chicken salad.

I give a range on some of the ingredients, adjust to your taste.

2-3 Chicken Breasts, seared
1-2 stalks celery, diced
1/4 to 1/2 medium red onion, diced
½ bunch parsley
Zest from 1 lemonJuice from 1/2 lemon
2-4 tbsp mayo (optional but binds it together) I use @chosenfoods
Salt & pepper to taste.

1. Slice your chicken breasts in half lengthwise if thick and season generously with salt.
2. Bring a pan to medium-high heat, add in 1 tbsp oil, and sear the chicken for 2-3 minutes on each side or until browned and cooked through. Remove from pan and let rest.
3. Chop your chicken, celery, red onion, and parsley.
4. Add to a bowl and top with lemon zest, lemon juice mayo, and stir together. Taste for seasoning and adjust as needed.
