This meal is a great way to add something new to your dinner lineup. The mango salsa provides a really unique taste and goes perfect on these fish tacos. Instructions:

Start by getting your rice ready. Take 1/2 cup of rice, 1/2 cup of tomato sauce, and 1/2 cup of bone broth. Then add in a bit of paprika, cumin, and chili powder. Mix everything together. This will cook for 30 minutes total. Start on Medium heat on the stove for 10 minutes, then turn down to low for the next 20 minutes.

For the mango salsa, cut up a mango, red pepper, red onion, and add it to a bowl. Squeeze in a lime, and then add as much honey as you’d like. Mix everything together.

For the fish, I used frozen cod and baked according to the package.

If you would like to add corn to your Mexican rice, boil corn for 5 minutes and then chop it up into a bowl once its done, adding it to the rice when that is finished.

Once the fish is ready, get your tortilla heated up on the stove, melt on cheese if you’d like, and then add on your fish and salsa, then enjoy!
