Recipe for Paneer Roti Quesadillas:

Ingredients:
– 1+½ cup Whole wheat flour
– 1 cup Spinach puree
– Water for kneading
– 1 tbsp Oil
– ¼ cup Red Pepper finely chopped
– ¼ cup Yellow Pepper finely chopped
– ½ cup Paneer grated
– ¼ cup Cheese grated
– 1 tbsp Chilli Flakes
– 1 tbsp Oregano
– Salt to taste
– Olive oil for cooking

Method:
– Knead the first 4 ingredients into a soft dough and make regular-sized soft rotis out of it
– In a bowl combine all the other ingredients to make the filling
– Place a roti, spread a layer of the filling on top and sandwich it with another roti
– Heat a tawa, cook the quesadilla with some oil on either side till golden brown and crispy
– Serve with a dollop of sour cream and enjoy!
