3 Eggs
250g peeled potatoes
1 onion
8g olive oil
1/4 tsp cayenne pepper, 1/4 tsp garlic powder
salt, black pepper

Peel the potatoes and cut them into 1cm or 1/2 inch cubes. Then microwave them for 4 min at 600W. Chop up the onion and crack 3 eggs into a bowl, add salt, and whisk the eggs.

Add oil to a pan on medium-high heat, add in the microwaved potatoes and the onions with a strong pinch of salt. Sautee them for 3 minutes. Switch the heat to medium, add the eggs, give them a gentle mix and then close the lid and let the eggs cook for 3 more minutes.

Remove the lid and place a plate on top of the pan and then flip the pan, holding the plate from underneath. Slide back the eggs to the pan to cook the other side as well for 2 more minutes.

Remove the Spanish tortilla from the pan and top with optional light mayonnaise done! The recipe is great for meal prep.
