Ingredients:

-1cup rolled oats
-2 eggs
-2  very ripe bananas
-1/2 tsp nutmeg or cinnamon
-1 tablespoon melted butter
-1 teaspoon baking powder
– Pinch of salt

Instructions:
– In a blender, combine the bananas, eggs, rolled oats,  salt, nutmeg, baking and melted butter and blend to have a batter.
If your batter is too thick, you can add  a little milk of choice, starting with a tablespoon at a time

– Heat a non-stick frying over medium heat and lightly grease with cooking oil.
– Pour a small amount of batter onto the pan to form pancakes. Cook until bubbles form on the surface and the edges look set, then flip and cook until golden brown on both sides.

Serve the pancakes warm, topped with a drizzle of maple syrup/ honey, or your favourite pancake toppings.
